Lamingtons | Lamington Recipe | Lamington Cake Recipe

Lamingtons is an Australian cake made with small square of white cake, dipped in a sweet chocolate glaze and rolled in desiccated coconut. The cake is made with basic ingredients like flour, sugar, butter, egg and milk and it taste so delicious. My love for lamingtons made me create this eggless lamingtons, no bake lamingtons and this jelly lamingtons. In this blog post, I am going to share how to make perfect laminations with step by step pictures and video.

Ingredients
  

For Vanilla Cake

  • 1 cup All Purpose Flour (Plain Flour) 120 grams
  • 1 teaspoon Baking Powder
  • ¼ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 70 Grams Unsalted Butter Softened
  • ¼ cup Granulated Sugar (50 grams) powdered
  • 1 no Egg
  • 1 teaspoon Vanilla Extract
  • ½ cup Milk 120 ml

For Chocolate Coating & Outer Coating

  • cup Confectioners Sugar
  • 2 tablespoon Cocoa Powder
  • ¼ cup Water
  • 1 tablespoon Unsalted Butter
  • cup Desiccated Coconut or as needed

Instructions
 

  • Preheat oven to 180 Degree C (356 Degree F). Line a 6 inch square cake pan with oil and sprinkle with flour. Coat all sides and tap excess flour. Set aside.
  • Take flour, salt, baking powder, baking soda in a bowl. Mix well and set aside. This is your dry ingredients.
  • Take butter, sugar in a bowl and beat till creamy and fluffy. Add in egg and vanilla, mix again and till fluffy. Now add in the dry ingredients and milk alternatively, ending with flour.
  • Pour this into a prepared pan. Bake it for 20 to 25 mins. Remove it and let it cool completely. once it is cooled, slice the dome off and cut into squares.
  • Now make chocolate glaze, take water and butter in a bowl, microwave it for 30 seconds till the butter is melted. Take sugar, cocoa in a bowl and mix well. Add water butter mix slowly and mix well. The glaze should be little thick.
  • Now take a cake and dip it in glaze and coat in coconut. Serve.

Notes

  • Don't over bake the cake, else it will turn hard. 
  • For healthy alternatives, you can use wheat flour instead of plain flour.
  • Make sure the glaze is semi thick and not too thin so you get the correct coating over the lamingtons.
  • You can bake the cake in advance. Store in fridge tightly wrapped with plastic wrap and assemble it just before serving.

Serving & Storage

Lamingtons are served as two halves with a layer of cream or strawberry jam between in cafes, lunch bars, bakeries, home industries and supermarkets. A raspberry variety is also common in New Zealand, while a lemon variety in Australia.
Lamingtons can be stored at room temperature for 1 day and in an air tight container in fridge for upto a week.
