    Desiccated coconut or dried coconut comes in handy for many deserts. It is easily available in all super market, but for some people it may be difficult to source.

    whenever I share a recipe using that I get lots of mail, asking where they can find it. So here I am sharing a homemade recipe for desiccated coconut. it is far more easier and quicker than you might think.

    About Homemade Desiccated Coconut

    Desiccated coconut is nothing but dried coconut, often made from copra. This is used in baking and even cooking. Specially used in baking cakes, cupcakes, desserts. Desiccated coconut is one of the main ingredient in Lamingtons.

    Desiccated coconut is a handy ingredient to have on hand, you can store it in fridge or freezer to use in your cooking. I like to add a handful in my morning oatmeal, porridges, granola and muesli.

    Making this at home is super easy. All you need is one ingredient - coconut. You will be needing some time and patience. I grate coconut and grind them to a fine powder in blender, then pop them into an oven and dry low and slow.

    Ingredients

    The one and only ingredient use to make desiccated coconut is freshly grated coconut. You have to take your coconut in a blender and run them till fine before baking to get even shreds.


    Step by Step Pictures

    1)You will be needing freshly grated coconut, this is the one and only ingredient for this recipe.

    2)take the coconut in a blender or food processor. Grind them fine, without adding any water.

    3)Pulse few times so it gets fine shreds. This way the coconut dries evenly and more faster.

    4)Take the coconut on a parchment lined baking tray. If you are making large batch, you might need to use multiple pans.

    5)Spread the coconut in a single layer thinly.

    6)Place the tray into a low oven. I preheated oven to 100 degree C. Baked the coconut in low oven for 25 to 30 minutes.

    7) You have to remove the tray from oven in between every 5 minutes, mix it once and bake again.

    8)After 20 to 25 minutes, It should get completely dry. if it still has moisture, pop it back in oven for 5 mins till it gets dry.

    Once it is dried, remove from oven. Cool completely and store in an air tight container.


    Expert Tips

    • Use freshly grated coconut to make this desiccated coconut.
    • Place the tray into a low oven, bake low and slow so the coconut dries evenly.
    • Don't skip blending the coconut, it makes even shreds which in turn dries coconut faster.

    How to Dry Under Sun

    You can use a dehydrator to make desiccated coconut. Or you can dry it under the sun. It may take 2 days.

    Serving & Storage

    You can use this in baking and cooking. Store desiccated coconut in fridge or freezer in a ziploc bag.

    Ingredients
      

    • 3 cups Fresh coconut grated

    Instructions
     

    • Preheat oven to 100 degree C (200 degree F). Line a baking tray with parchment paper and set aside. Take coconut in a blender and pulse few times so it gets fine and even.
    • Now spread this in the baking tray in an even single layer and pop it in oven for 20 to 25 mins. Every 5 minutes remove the tray from oven, give a quick mix and bake again. This low heat till evaporate the moisture and make it dry.
    • When you check the coconut, It should get completely dry. If it still has moisture, pop it back in oven for 5 more min. Now remove it and let it cool completely.
    • Store in an air tight container in fridge.
