    Lamington Cake Recipe

    Lamingtons is an Australian cake made with small square of white cake, dipped in a sweet chocolate glaze and rolled in desiccated coconut. The cake is made with basic ingredients like flour, sugar, butter, egg and milk and it taste so delicious. My love for lamingtons made me create this eggless lamingtons, no bake lamingtons and this jelly lamingtons. In this blog post, I am going to share how to make perfect laminations with step by step pictures and video.

    This is one cake which was always in my mind for quite a long time. One day, I had all the ingredients on hand and immediately gave it a shot. Modified the recipe as per my taste and to my surprise it was delicious. Loved it to the core.

    I saved couple of pieces for me and hubby and packed the whole thing for my sister, because she has been asking me to bake something for her college mates. I am sure they will love it too.

    About Lamingtons

    Lamington is a dessert of Australian origin. It consists of squares of sponge cake coated first in a layer of chocolate sauce, and rolled in desiccated coconut. Lamingtons are sometimes served as two halves with a layer of cream or strawberry jam between served in cafes, lunch bars, bakeries, and supermarkets. Australians prefer to call lamingtons as Lammo or Lammos.

    A lamington is a traditional Australian cake made of squares of butter cake or sponge cake coated in chocolate sauce and rolled in desiccated coconut. The thin mixture of the chocolate sauce is absorbed by the cake which adds a beautiful texture to the cake. I have shared a version of jelly lamingtons in which I dipped the cake in jelly mixture before rolling in coconut.

    This cake is like a soft rich vanilla cake dipped in a chocolaty sauce and coated in desiccated coconut. If you are a coconut lover like me, you cannot resist when you roll it in coconut, because the coconut smell just wafts through the cake. This cake is very similar to my honey cake.

    Lamingtons are still a popular treat in Australia and New Zealand. This is frequently sold at lamington drives, which are fundraisers for schools or charitable organisations.

    Lamingtons Ingredients

    Plain Flour - I used I used plain flour (all purpose flour). You can use wheat flour instead of plain flour for a healthy alternative.

    Butter - since this cake has salt added, you have to use unsalted butter. Some times I get comments from people saying that their cake taste salty. The reason is salted butter. Always use unsalted butter in your baking goodies so you can control the salt level in the cake.

    Sugar - I used granulated sugar which I powdered in a blender. This makes the sugar cream easily with the butter.

    Egg - You need egg in this recipe. if you are looking for eggless option, check my egg free lamingtons.

    Raising Agent - Baking powder and baking soda is used.

    Milk - Use full fat milk to adjust the consistency of the batter. You can use almond milk instead of regular milk.

    Vanilla Extract - the main aroma for the cake which makes it so good.

    Chocolate Glaze - You need confectioner sugar, butter, water and cocoa powder to make the chocolate glaze.

    Desiccated coconut - I always use unsweetened fine shredded desiccated coconut for coating my lamingtons.

    How to Make Lamingtons in 6 Easy Steps

    Pre-Prep - Preheat oven to 180 Degree C (356 Degree F). Line a 6 inch square cake pan with oil and sprinkle with flour. Coat all sides and tap excess flour. Set aside.

    Dry Ingredients - Take flour, salt, baking powder, baking soda in a bowl. Mix well and set aside. This is your dry ingredients.

    Cake Batter - Take butter, sugar in a bowl and beat till creamy and fluffy. Add in egg and vanilla, mix again and till fluffy. Now add in the dry ingredients and milk alternatively, ending with flour.

    Baking Cake - Pour this into a prepared pan. Bake it for 20 to 25 mins. Remove it and let it cool completely. once it is cooled, slice the dome off and cut into squares.

    Chocolate Glaze for Cake - Now make chocolate glaze, take water and butter in a bowl, microwave it for 30 seconds till the butter is melted. Take sugar, cocoa in a bowl and mix well. Add water butter mix slowly and mix well. The glaze should be little thick.

    Assembling Lamingtons - Now take a cake and dip it in glaze and coat in coconut. Serve.

    How to Make Lamingtons (Stepwise Pictures)

    Ingredients

    1)Take all your ingredients and set aside.

    Pre-Prep

    1)Preheat oven to 180 Degree C (356 Degree F). Line a 6 inch square cake pan with oil and sprinkle with flour. Coat all sides and tap excess flour. Set aside.

    Pro Tip: Instead of doing this, you can line the pan with parchment paper as well.

    Dry Ingredients

    2)Take flour in a bowl. I used plain flour (all purpose flour). Add in baking powder into the flour.

    Pro Tip: You can use wheat flour instead of plain flour for a healthy alternative.

    3)Add in baking soda. Baking soda is also known as cooking soda.

    4)Add a pinch of salt.

    5)Mix this until combined. This is your dry ingredients.

    Creaming Butter & Sugar

    6)take soft butter in a bowl. Remove the butter from fridge 1 hour before baking so it softens.

    My butter look slightly melted because I forgot to take the butter from fridge so I warmed my butter in microwave which made it melt a bit.

    7)Add in sugar. This is regular granulated sugar which I powdered in a blender.

    8)Cream butter with sugar till it is combined and looks creamy.

    9)Add in one egg at a time and mix well.

    10)add in a splash of vanilla extract with the egg. You can use almond extract as well.

    11)Mix everything together till it looks creamy like this. If your mixture looks curdled, it is not an issue.

    Making Cake Batter

    12)Now we are going to alternate between flour and milk. I added ⅓ of the dry ingredients. Use a spatula and gently fold the flour into the batter.

    13)Now pour in ½ of the milk mixture and gently fold the batter.

    15)Pour the remaining milk completely and gently fold the batter.

    16)Add the remaining flour entirely.

    17)Fold the batter using a spatula. Don't over mix the batter fold it gently,

    Baking the Cake

    18)Spoon the batter into the cake pan. Spread it evenly using a spatula.

    19)Bake the cake until it is cooked completely. Remove the cake from oven and let it cool for 10 minutes in the cake pan.

    20)Remove the cake from the mould gently and set aside to cool completely while you make the glaze.

    Make Chocolate Glaze

    21)Take all your ingredients for chocolate glaze. You need confectioner sugar, butter, water and cocoa powder.

    22)Take water and butter in a small bowl. Place it inside the microwave for 30 seconds so the butter melts and the water gets hot.

    23)Now the butter is melted. Remove the bowl carefully and set aside. Instead of using microwave, you can do this step in a sauce pan.

    24)Take confectioners sugar in a bowl.

    25)Add in cocoa powder to the confectioner sugar. Mix it well till combined.

    26)Add in the butter and water mix into the sugar.

    27)Mix this together. You can add a splash of vanilla extract if you want.

    28) This is the consistency you are looking for. It has to be thick but not too thick.

    Cutting Cake into Cubes

    29)use a serrated knife to remove the top of the cake. so it is even.

    30)Cut the cake into cubes. The size of the cubes totally depends on you. I usually cut them into 9 cubes.

    Coating Lamingtons

    31)Take a square of cake. Dip it in the chocolate glaze. I used my fork to help me in this process.

    32)Coat the cake with the glaze. Make sure you coat all the sides of the cake.

    33)Remove the cake gently from the glaze. I used my fork to do this step.

    34)Add the cake into the coconut. I am using unsweetened desiccated coconut.

    35)Coat the cake in the coconut generously. Make sure you coat them on all sides.

    36)Lamingtons are done.

    Expert Tips

    • Don't over bake the cake, else it will turn hard. 
    • For healthy alternatives, you can use wheat flour instead of plain flour.
    • Make sure the glaze is semi thick and not too thin so you get the correct coating over the lamingtons.
    • You can bake the cake in advance. Store in fridge tightly wrapped with plastic wrap and assemble it just before serving.

    Serving & Storage

    Lamingtons are served as two halves with a layer of cream or strawberry jam between in cafes, lunch bars, bakeries, home industries and supermarkets. A raspberry variety is also common in New Zealand, while a lemon variety in Australia.

    Lamingtons can be stored at room temperature for 1 day and in an air tight container in fridge for upto a week.

    The lamington was named after Lord Lamington, Governor of Queensland from 1896 to 1901, or possibly after his wife, Lady Lamington.

    Ingredients
      

    For Vanilla Cake

    • 1 cup All Purpose Flour (Plain Flour) 120 grams
    • 1 teaspoon Baking Powder
    • ¼ teaspoon Baking Soda
    • ¼ teaspoon Salt
    • 70 Grams Unsalted Butter Softened
    • ¼ cup Granulated Sugar (50 grams) powdered
    • 1 no Egg
    • 1 teaspoon Vanilla Extract
    • ½ cup Milk 120 ml

    For Chocolate Coating & Outer Coating

    • 1½ cup Confectioners Sugar
    • 2 tablespoon Cocoa Powder
    • ¼ cup Water
    • 1 tablespoon Unsalted Butter
    • 1½ cup Desiccated Coconut or as needed

    Instructions
     

    • Preheat oven to 180 Degree C (356 Degree F). Line a 6 inch square cake pan with oil and sprinkle with flour. Coat all sides and tap excess flour. Set aside.
