Vegetarian Taquitos Recipe with step by step pictures. Easy to make mexican snack made with tortilla stuffed with vegetables which taste amazing when fried crispy.
Mix all ingredients give for stuffing bowl, mix well and set aside.
Spread the filling in the tortilla and roll it right.
Secure it with tooth pick and shallow fry in hot oil till crisp. Keep rotating and fry. Once cooked, strain onto some paper towel. Gently remove toothpick.
Serve with salsa, mayo.
Notes
I used leftover chapati, you can use readymade tortilla like corn tortilla, flour tortilla or whole wheat tortilla.
You can add any finely shredded vegetables like cabbage, carrots in the filling.
Refried beans can be used instead of cream cheese for more mexican touch.
Tomatoes can be skipped and a spoonful of salsa can be added in the filling.
Fry the taquitos on low to medium heat till crispy on all sides.
