    I have heard about this uthappam, but i have never tasted it. But during our last visit to a vegetarian restaurant here, i saw this on the menu and ordered it. When i got my plate, i was quite excited to see the plate, because what i expected on my plate is normal onion, podi, carrot, tomato and coriander uthappam. But what i received is a onion, podi, coconut, masala and cashew uthappam. I loved those topping ideas and immediately i tried it at home and it turned out just lovely..

    Preparation Time : 10 mins
    Cooking Time : 30 mins
    Serves : 4


    Ingredients:

    Idli  Dosa Batter as needed (Recipe here)
    Cashews  as needed
    Potato Masala as needed (recipe below)
    Idli Podi as needed (Recipe here)
    Onions, finely chopped as needed
    Coriander leaves, finely chopped as needed
    Grated Coconut as needed
    Oil for Ghee for pan frying

    For Potato Masala:
    Oil - 1 tblspn
    Mustard Seeds / Kaduku - 1 tsp
    Urad dal / Ulundu Paruppu - 1 tsp
    Curry leaves a sprig
    Asafoetida / Hing / Kaya Podi - a pinch
    Onions - 1 medium size chopped finely
    Ginger - 2 tsp chopped finely
    Green Chillies - 2 chopped finely
    Carrot - 1 medium size chopped finely
    Potato - 2 large boiled, peeled and mashed
    Turmeric Powder / Manjal Podi - 1 tsp
    Salt to taste
    Coriander leaves a handful chopped finely

    Method:

    Heat oil in a pan, add in mustard, urad dal, asafoetida and curry leaves. Let them sizzle.Add in ginger and saute for a min.

    Add in onions, carrots, chillies and saute well.Add in salt and turmeric powder. Mix well.Add in some water and bring it to a boil.

    Add in mashed potatoes and mix well.Throw  in the coriander leaves and mix well. Masala done.

    Heat a dosa pan and pour ladleful of dosa batter over it in small size.

    Spread the top with each ingredient on each of the dosa. Drizzle oil or ghee over it.

    Cook till the bottom crisp up. Flip over and cook.

    Remove and serve.

    remove it in a bowl and set aside

    Now take the filling for your five uthappam, aloo masala, cashews, coconut, onions & coriander mix, idli podi

    pour small uthappam in a pan..I can only make 4 uthappam
     in my tawa

    top with the fillings

    Coconut uthappam

    now drizzle oil or ghee all over it
