    Banana Stem Soup | Banana Stem Soup Recipe | Vazhaithandu Soup

    Vazhaithandu refers to banana stem and is used in various soups, stews, curries, stir fries and other dishes. It is the part which is present inside the banana tree trunk. As soon as you harvest the banana bunch from the tree, you can shop off the trunk and peel the outer skins from the banana tree. As you keep on peeling you will find a white firm banana stem. 

    The banana tree is one of those few species where each part is used in some way or the other, be it the leaves which are used for eating food the fruit which is eaten in the raw or ripe form or the flower or stem which is also consumed.

    Banana stem can be cooked or consumed raw in juice form. The stem is cooked in various ways in South Indian cuisine and in some parts of West Bengal. Dishes such as vazhaithandu poriyal, vazhaithandu kootu (banana stem cooked with lentils), vazahaithandu thoran (banana stem tempered and garnished with coconut) are popular in Tamil Nadu.

    How to Make Soup in Pressure Cooker or Instant Pot

    • Heat ghee in a pressure cooker.
    • Add in all ingredients. Cover and pressure cook.

    Ingredients
      

    • Banana Stem - 3 cups chopped
    • Ghee or Clarified Butter - 2 tsp You can use butter as well
    • Green Chillies - 1 or 2 optional
    • Ginger Garlic Paste - 2 tsp grind 1 inch piece ginger and 4 cloves garlic together
    • Salt to taste
    • Black Pepper Powder to taste

    Instructions
     

    How to Prepare Banana Stem:

    • Wash banana stem well. Cut it into thick slices. As you slice them into rounds you will find fibrous stuff. Remove it using your fingers. Just swirl and remove it. You can dispose the fibers.
    • Now chop them into chunks. Immerse them in cold water.
    • How to Make Soup in Pressure Cooker:
    • Heat ghee in a pressure cooker.
    • Add in banana stem. green chillies and ginger garlic paste. Stir fry for 4 to 5 mins.
    • Add water till the banana stem is completely immersed.
    • Now cover the pot and pressure cook for 4 to 5 whistle.
    • Turn off the heat and let the steam escape by itself.
    • Open the cooker and blend the banana stem using a stick blender.
    • Now strain the soup.
    • Add it in a pan and bring it to a boil. Boil for 4 to 5 mins.
    • Mix cornflour in water and add it in to thicken the soup.
    • Season with salt and pepper.
    • Serve.
    • How to Make Soup in an Instant Pot:
    • Set the instant pot to saute mode.
    • Add ghee.
    • Add in banana stem. green chillies and ginger garlic paste. Stir fry for 4 to 5 mins.
    • Add water till the banana stem is completely immersed.
    • Now cover the pot and pressure cook for 20 mins.
    • Leave it so the pressure release by itself.
    • Open the cooker and blend the banana stem using a stick blender.
    • Now strain the soup.
    • Add it in a pan and bring it to a instant pot.
    • Set the instant pot to soup mode. Boil for 4 to 5 mins.
    • Mix cornflour in water and add it in to thicken the soup.
    • Season with salt and pepper.
    • Serve.

    1)If you don't have instant pot or pressure cooker. Just use a sauce pan or a casserole to make the soup. It will take some time for the banana stem to cook.

    Vazhaithandu Soup Recipe With Step by Step Pictures

    1)Take young banana stem. You can easily buy it in Indian stores or if you have banana tree which you have harvested bananas then you can get it from the tree. Check intro on how banana stem is removed from banana tree.

    2)Slice into rounds. you will find a fibrous stuff in banana stem. You have to remove them using your fingers.

    4)Once it is sliced. Chop roughly

    5)Take it in a bowl and cover with cold water.

    6)Heat a tsp of ghee in a pressure cooker

    8)Add in green chillies and ginger garlic paste. Stir fry for 3 to 4 mins

    15)Press, squeeze and extract all the soup as possible.

    16)Take the milky soup in a sauce pan. Bring it to a boil.

    17)Once the soup comes to a boil. Reduce the flame. Add in cornflour mixed with some water. This is going to thicken the soup.
