    Bread Kunafa Recipe

    Kunafa is one of the most popular Arabic | Turkish dessert. Traditionally kunafa is made with kunafa dough or kataifi, but this recipe is made using bread and it is too easy to make and really delicious. Enjoy this bread kunafa with some ice cream.

    Bread Kunafa Recipe is one of the easy dessert you could ever make. This needs just a handful of ingredients and is super easy. Traditionally kunafa is made with kataifi pastry which can be hard to source at some places. But this recipe uses bread instead of shredded phyllo pastry which makes it affordable and accessible.

    About Bread Kunafa

    Kunafa is a popular Arabic | Turkish dessert made with kataifi pastry also known as kunafa dough or shredded phyllo pastry. The pastry is mixed with melted butter or ghee and layered with cheese which is then cooked over stove top or in the oven. Finally sugar syrup is poured all over which makes it one of the most addictive dessert.

    Some people find it difficult to source kataifi pastry. Hence this easy recipe which is similar to the original. Try this bread kunafa if you cannot find kataifi. It is easy to make and taste absolutely delicious.

    Ingredients

    Bread slices - you can use white bread slices which is pulverised in blender till coarse to get fresh breadcrumbs.

    Butter - Melt butter before mixing into the breadcrumbs. You can use ghee instead of butter as well.

    Cream - I used fresh cream (thicker part alone) You can use clotted cream, thickened cream or cream cheese.

    Cheese - use fresh mozzarella cheese to create the cheese pull.

    Sugar - Used in sugar syrup which is flavoured with rose extract.

    Step by Step Pictures

    1)Start by making sugar syrup. take sugar, water in a sauce pan and bring it to a boil. Cook this until it reaches sticky texture.

    2)Add in rose extract if using. Set aside somewhere warm.

    3)Take bread slices in a blender and blend into crumbs. Take the fresh breadcrumbs in a bowl.

    4)Take some ghee or melt some butter. Add the melted butter into the breadcrumbs and mix it really well. The mixture should resemble damp sand.

    5)Now take half of the breadcrumb mixture and add them to a round baking pan. Press gently and firmly.

    6)Spread cream on top. Instead of cream you can use custard, clotted cream, mascarpone cheese as well. I am using thicker part of Amul fresh cream. You can even use cream cheese as well.

    7)Sprinkle top with a layer of mozzarella cheese. Press gently.

    8)Now add the remaining breadcrumbs on top. Press gently and Flatten the top.

    9)Place the pan into the oven and bake until golden brown. Remove from oven and allow it to cool just for 5 minutes.

    10)Invert the kunafa on a serving platter.

    11)Pour syrup over the bread kunafa. Leave it to soak completely.

    12)Decorate with powdered pistachios.

    13)Serve warm.

    Equipment

    • 4 inch round pan
    • OTG

    Ingredients
      

    • 4 slices White Bread you need 2 cups of ground breadcrumbs
    • ⅓ cup Butter melted

    For Filling

    • ½ cup Fresh Cream (Thickened cream or clotted cream)
    • ½ cup Mozzarella Cheese grated

    For Sugar Syrup

    • ½ cup Sugar
    • ¼ cup Water
    • ⅛ teaspoon Rose Extract

    For Topping

    • 3 tablespoon Pistachios powdered

    Instructions
     

    • Preheat oven to 180 degree C.
    • Take sugar and water in a sauce pan. Bring it to a boil. Boil till syrupy. Add rose extract and mix well. Set this aside warm.
    • Take bread in a blender or food processor and powder till fine. Now take it in a bowl, add melted butter and mix well. Spoon half of the mixture into the baking pan. Press flat and firm.
    • Now spread thick cream or clotted cream over the base. Sprinkle mozzarella cheese. Top with remaining breadcrumbs and press lightly.
    • Now bake this for 25 to 30 mins. The top should be golden brown. Once it is baked, remove from oven. Allow it to cool for 5 minutes in the pan. De mould the kunafa on a serving plate.
    • Now take the syrup, pour it over the bread kunafa and leave to soak for 10 mins. Serve hot.
