I am in love with club sandwiches. After my discovery of the eggless low fat mayo recipe, I am digging in often into these sandwiches without any guilt. I have three different version of mayonnaise in my blog. You can check all of them here.

Ingredients for Chicken Club Sandwich
- Bread Slices : 6
- Butter - 3 tblspn
- Egg - 2
- Salt to taste
- Pepper to taste
- Tomatoes - ½ sliced thinly
- Oil - 1 tsp
For Chicken Filling:
- Chicken - 11/2 cup cooked and shredded
- Mayonnaise - 3 to 4 tbsp
- Salt to taste
- Pepper to taste
- Red Pepper Sauce - 1 tsp
How to Make Chicken Club Sandwich
- Mix the chicken filling ingredients in a bowl and set aside.
- Heat oil in a small pan, and crack a egg in, season it with salt and pepper. flip over and cook. Remove and set aside.
- Toast your bread slices.
- Take a breadslice, butter it slightly, spoon some chicken filling over it cover with another buttered bread and place a fried egg over it, place few tomato
slices over it and season with some salt and pepper. - Cover with another buttered bread.
- Press firmly and Cut it into traingles.
- Serve.
