Gujarati Patra Recipe - Patra Farsan Recipe
Ingredients
- Chepankilangu Leaves / Arbi Leaves -4
FOR BATTER:
- Gram Flour / Besan / Kadalai Mavu - 1 ½ cup
- Red Chilli Powder - 1 tblsp
- Salt to taste
- Turmeric Powder - 1 tsp
- Jaggery / Gur - 3 tblsp
- Tamarind Pulp - 3 tblsp
- Ginger Paste - 1 tblsp
- Oil - 1 tblsp
- Water as needed
FOR SEASONING:
- Oil - 2 tblsp
- Mustard Seeds / Kaduku - 1 tsp
- Cumin Seeds / Jeerakam - ½ tsp
- Sesame Seeds / Ellu / Til - 2 tblsp
- Curry Leaves - 1 sprig
Instructions
- Mix all ingredients to a smooth thick batter.
- Take arbi leaves and remove the thick stalk.
- Take each leaf spread batter on top place another leaf and repeat the same.
- Roll it tight.
- Steam it for 30 mins.
- Cool it and cut into pieces.
- Now heat oil in a pan, add in mustard, cumin and sesame seeds and let it sizzle.
- Add the sliced arbi roll and cook till light golden.
- Serve hot.
