    Whey from the milk of sheep, cows, goats, or Italian water buffalo is used to make the whey cheese known as ricotta in Italy. It is made, like other whey cheeses, by coagulating the casein-remaining proteins, particularly albumin and globulin, into a cheese.

    This cheese calls just for milk. The process is very similar to paneer making. But you don't have to weigh the cheese and make it hard. It is soft curdles of cheese curds. You can use this to make pasta, cakes and any recipes that calls for ricotta cheese.

    Milk :

    Milk aids in the separation of curds from whey and the regulation of undesirable bacterial growth in cheese. To begin making cheese, special starter bacteria are typically added to milk. These bacteria reduce the pH of the milk by converting lactose, the milks sugar, to lactic acid.

    Lemons are a popular fruit that people use to flavour cuisine in tiny amounts. However, because of the powerful, sour flavour, people rarely eat them alone.

    Ingredients

    • 1 litre Whole Milk
    • 2 tbsp Lemon Juice
    • ½ tsp Salt

    Instructions

    • Take milk in a sauce pan. Bring it to a simmer. Dont let it boil.
    • Add in salt and mix well.
    • Now add in lemon juice and mix gently till it curdles.
    • Once it is curdled strain it. Let it sit for 5 mins.
    • Now scoop it into a container and serve.
