    Korean Cheese Buldak Recipe (Fire Chicken)

    Chicken Cheese Buldak also known as Korean Fire Chicken with Cheese is a popular Korean recipe made with chicken, gochujang, gochugaru, seasonings and cheese. It is also called as Cheese Buldak, Korean Chicken Buldak. Fiery chicken topped with mozzarella cheese and cooked till tender.

    My love for Korean foods never ends. It has become one our family favorite cuisine. Some how we enjoy the spicy, sweet umami packed flavour of the dishes and this Korean cheese buldak is a winner.

    I am surprised how easy it is to make this cheese buldak. You marinate the chicken with ingredients, add them to a pan and top with cheese to cook. Thats it, cheesy Korean buldak is ready. Check my baked camembert.

    About Korean Cheese Buldak

    This Super-spicy chicken, is called as buldak in Korean. Not to confuse with the Korean buldak noodles. The word 'bul' means 'fire', and 'dak' means 'chicken', so you can call this "fire chicken."

    Fire chicken is Korean bar food (known as anju). Chicken marinated in a spicy gochujang sauce are chargrilled before being covered with mozzarella cheese. You can enjoy this with my Pomegranate Tea.

    The recipe cannot be easier. You can use chicken thighs or breast. make sure it is boneless. You add all the ingredients mentioned, garlic, gochujang, gochugaru, sugar, honey, soy sauce and chicken in a bowl. Mix well to combine.

    Now transfer the whole thing to a pan. cover and cook till the chicken is almost cooked. If you are using chicken breast, then it cooks faster. Now add the Final Topping of mozzarella cheese and continue cooking till cheese melts.

    In the end garnish with spring onions and sesame oil. That it. How easy it sounds. This Korean buldak chicken along with kimchi, kimchi fried rice and cold drink is perfect.

    Ingredients

    • Chicken - I used boneless cubed chicken breast for this. You can use chicken thigh, it may take a little longer to cook.
    • Ginger and Garlic - finely chop or grate them and add in the marianation.
    • Gochujang - One of the main flavouring to this chicken, which adds the umami taste and colour.
    • Gochugaru - makes this chicken like fire, gives colour and heat.
    • Oil - I used regular olive oil in the marination and toasted sesame oil in the end for flavour.
    • Seasonings - salt, sugar, pepper powder, honey are the seasonings added in the chicken.

    Step by Step Pictures

    1)Take boneless chicken breast and cut them into chunks. You can use chicken thigh also. Chicken breast tends to cook faster while thigh takes little longer to cook.

    2)Now lets make the marination. Take gochugaru in a bowl. Add in finely chopped ginger and garlic.

    3)Add in sugar to taste. I am using white sugar, you can use brown sugar as well.

    4)Add in gochujang.

    5)Drizzle in honey. You can use rice syrup if you have that.

    6)Add in regular cooking oil.

    7)First mix all of this together and taste check. Now add in black pepper powder and salt to taste.

    8)Mix this well and taste check and adjust the seasoning.

    9)Add in the cubed chicken.

    10)Mix well into the marinate.

    11)Now lets cook this. Transfer this whole thing into a skillet. Make sure you use a small skillet that can fit this sunggly.

    12)You are going to cover this and cook until the chicken is cooked. It will take around 12 to 15 minutes.

    13)Now the chicken is cooked and the moisture is dried up.

    14)Add in chopped mozzarella cheese on top of the chicken. Cover again and cook until cheese gets melty.

    15)Like this. Now add in spring onions and toasted sesame oil on top.

    16)Enjoy.

    Ingredients

    • 2 large Boneless Chicken Breast cubed
    • 200 grams Mozzarella Cheese chopped

    For Marination

    • 4 tablespoon Gochugaru (Korean Red Pepper Powder)
    • 1 teaspoon Black Pepper Powder
    • 2 tablespoon Ginger peeled and chopped finely
    • 2 tablespoon Garlic peeled and chopped finely
    • 2 tablespoon Gochujang (Korean Red Pepper Paste)
    • 2 tablespoon Olive Oil
    • 2 teaspoon Soy Sauce
    • 1 tablespoon Honey
    • 1 tablespoon Sugar
    • Salt or to taste

    For Garnishing

    • 1 tablespoon Toasted Sesame Oil
    • 2 no Spring Onions (Green Onions) chopped finely

    Instructions
     

    • Take all marination ingredients in a bowl and mix well to form a thick paste like texture. Add in cubed boneless chicken breast and mix well.
    • Now Transfer this to a skillet and cover it with a lid. Simmer and cook this for 12 to 15 minutes till chicken is cooked.
    • Now top this with chopped mozzarella cheese and cover it for another 2 to 3 mins till cheese is melted. Now sprinkle top with spring onions.
    • Enjoy.
