    Rava paniyaram is a tasty South Indian dish which is made with rava and yogurt. In this recipe the batter is mixed with spices  onions, curry leaves and green chillies. Rava Kuzhi Paniyaram is easy to make and it is perfect for breakfast, evening snacks or tea time. This paniyaram goes good with coconut chutney or tomato chutney. This dish is loved by everyone because of its simplicity and flavours.

    Rava Kara Paniyaram is one recipe which i made recently and loved it instantly. It is a simple recipe and taste really delicious. The paniyaram turns out so soft and fluffy. Loved the texture as well. This recipe calls for few ingredients. I just added onions, you can add carrots, beans, cabbage and capsicum. This way it turns even more healthy..

    I use my non stick kuzhi paniyaram pan, it is my favourite. Because you can experiment with any of your own kuzhi paniyaram in this and it will make sure it comes off easily without sticking..This is my recent experiment and i loved it to the core.

    About Rava paniyaram

    This rava kara kuzhi paniyaram is a snack which is soft inside and crispy outside which is linked for its texture. The onions, green chillies and curry leaves in the batter gives a fresh and tasty flavour to this paniyaram.

    It is a quick snack to make which doesn't take much time . It is suitable for busy mornings and evening snacks. Pep enjoys this kuzhi paniyaram because it is light and easy to digest. This is a perfect snack for a small get togethers.

    This is a quick and easy recipe. It works well for breakfast and snacks without much efforts. You don't require any special skills. This is perfect dish for beginners. This is a versatile dish. We can easily experiment with fillings and toppings.

    This rava kara kuzhi paniyaram is a traditional South Indian dish which brings a comfort and nostalgic feel. This paniyaram goes well with chutney and sambar. Which makes it even more flavourful and delicious. This dish doesn't feel heavy on the stomach. This is a light and easy to digest recipe.

    Ingredients

    Rava or Sooji : It is the base of the paniyaram. It gives a soft texture.

    Thick unsour curd/ Yogurt: This makes the batter smooth and helps the paniyaram stay soft inside.

    Baking soda: It makes the paniyaram soft and fluffy.

    Oil: It is used for cooking the paniyaram and it prevents the sticking.

    For tempering: I used mustard, urad dal, curry leaves, onions and chillies.

    Extra Tips for Perfect Paniyaram

    • Use a non stick paniyaram pan. It makes the flipping easy and prevent sticking.
    • Keep the batter slightly thick. This helps the paniyaram to hold its shape.
    • To get a soft and fluffy paniyaram add baking soda just before cooking.
    • Add finely chopped vegetables. It makes the dish more colourful nutritious.
    • Cook on medium heat it avoids burning while letting the inside cooks fully.
    • Use minimal oil. It prevents the paniyaram from becoming greasy.

    Step By Step Pictures

    1)Gather all the ingredients. Chop onions and green chillies finely. Heat oil for tempering and for cooking the paniyaram.

    Now lets mix the sooji for the paniyaram batter. Take rava or sooji in a bowl.

    2)Add in yogurt. I am using plain yogurt.

    3)Mix well. The batter should be thick,

    4)Add in water to get the correct consistency.

    5)Add some salt.

    6)Mix this and set this aside for 10 to 15 minutes.

    7)Now lets make the tempering for the paniyaram.

    8)Heat oil in a pan.

    10)Add in mustard and urad dal.

    11)Let them get golden brown.

    12)Add in onions, chillies and curry leaves.

    13)Saute for 1 min.

    14)Add in baking soda into the paniyaram batter just before cooking. Instead of baking soda, you can use eno salt too.

    15)Mix the batter really well, it will get foamy.

    16)Add the tempering into the paniyaram batter.

    17)Mix well.

    18)This is how thick the batter should be.

    19)Heat kuzhi paniyaram pan with some oil or ghee for cooking.

    20)Spoon the paniyaram batter into the pan.

    21)Let it cook for few minutes.

    22)Once base is golden, remove from the pan.

    23)Flip over and cook.

    24)Let it cook for few more minutes.

    25)Paniyaram is done.

    26)Remove to serving plate and enjoy.

    27)Serve.

    Expert tips

    • Let the batter rest for 10-15 mins. This makes the paniyaram softer.
    • Use small spoon for batter. It helps to make uniform sized paniyarams
    • Use fresh curd. It gives good taste and fluffiness to the dish.
    • Serve immediately. It tastes better when hot.

    Variations

    Wheat kara kuzhi paniyaram: It is made with wheat flour and spices. This snack is healthy option for kids. It has a slightly crisp outside and soft inside. Which is perfect for breakfast and evening snacks.

    Masala kuzhi paniyaram: This is a spiced version of paniyaram where spices are used. It is flavoured with onions, chillies and spices. They are tasty and full of flavours.

    Ragi kara paniyaram: It is made with ragi flour. This paniyarams are healthy and full of nutrients. They have mild flavours. It is suitable for healthy snack lovers.

    Muttai paniyaram: This paniyaram is made by adding eggs to the batter. It makes them rich and soft. This is a perfect dish for breakfast because it is loaded with protein.

    Can I make this paniyaram without curd?

    No Curd or yogurt is main for this dish to make the paniyaram fluffy.

    How long should I cook each paniyaram?

    Cook until the bottom is golden brown, then flip and cook the other side 

    Can I add vegetables?

    Yes. Finely chopped carrots, beans can be added for extra flavour.

    Can I prepare the batter in advance?

    Yes. But add baking soda just before cooking for the best result.

    Can I freeze the cooked paniyaram?

    They tastes better when eaten fresh, but you can also freeze and reheat it gently.

    Equipment

    Paniyaram pan

    Ingredients
      

    • 1 cup Rava / Sooji
    • ¾ cup Plain Yogurt (Curd)
    • ½ cup Water
    • 1 teaspoon Salt to taste
    • ½ teaspoon Baking Soda or 1 teaspoon Eno fruit Salt
    • ⅓ cup Oil or Ghee

    For Tempering

    • 1 tablespoon Oil
    • ½ teaspoon Mustard Seeds
    • ½ teaspoon Split Urad Dal
    • 1 sprig Curry leaves
    • 1 medium Onion peeled & chopped finely
    • 2 no Green Chillies chopped finely

    Instructions
     

    • Take sooji, curd in a bowl and mix well. Add water little at a time and make it into a thick batter.
    • Add salt and mix well. Set aside while you make the seasoning.
    • Heat oil in a pan, crackle in mustard and urad dal. Add in curry leaves.
    • Add in onions,chillies and saute for a min. Set aside.
    • Now take the batter and add in little baking soda.
    • Now add the seasoning to the batter and mix well.
    • Heat your paniyaram pan with oil. Spoon some batter in and fry till the bottom crisp up. Flip over and cook.
    • Remove and serve.

      Should we add baking powder to the batter? Isnt it unhealthy?? Is there any alternate for that since I dont want to add it..

      This is a grt idea when u dont have idli batter available. Will surely try this next time.How much eno can be added instead of 1/2 tsp of baking soda?? Wud one sachet be enough?

      Hi arthi,tried this recipe but got stuck and was like uppma in the paniyram kuzhi,i dint roast the raa and used iron pan.
