    Quick egg roast with urad dal is a simple recipe that combines the richness of eggs with the nutty taste of urad dal. It is a quick and flavourful Indian recipe where boiled eggs are cooked with basic tempering and spices. This recipe is incredibly easy to prepare, especially if you already have boiled and peeled eggs in the kitchen or in the refrigerator. It is a fantastic way to make a quick delicious recipe without spending much time in the kitchen. This recipe goes very well with rasam rice, chapathi, idiyappam.

    This is one of the recipe which my friend gave me. She told me that boiled eggs can be made into this lovely roast in minutes. Urad dal is the key ingredients in this recipe, it really makes it more tasty. This roast goes very well with plain rasam rice.

    About Boiled Egg Roast

    Eggs have been one of my all time favourite ingredients. It is so versatile, rich in protein and comes in handy to make any quick tasty meal in no time. Over the period of time, I have shared a lot of egg recipes in my blog and this one is so special as it is shared by my friend. She told me that you can turn boiled eggs into a delicious roast in a few minutes. The secret ingredient used in this recipe is urad dal, it adds a unique flavour and crunch that make this dish delicious. This egg roast recipe pairs perfectly with rice, rasam rice, chapathi, and idiyappam. 

    If you’re someone who always has eggs and basic spices in the kitchen, then this quick egg roast can be made in less than 15 minutes. When there is no time to cook something elaborate, but still you want something healthy and flavourful, then this recipe is your go-to option during busy days. This recipe goes very well with rice, chapathi, idiyappam or can be enjoyed on its own. 

    This version of egg roast is super simple and easy to make. You don’t need any masalas in this recipe. It uses a basic tempering of mustard seeds, urad dal, oil and add in the spice powder like turmeric powder, chilli powder, followed by hard boiled eggs. Cook on low heat until the eggs are nicely roasted.

    WHY I LOVE THIS RECIPE - I love this egg roast because it's full of flavour and easy to make. The spices coat the boiled eggs perfectly and it goes very well with rice, chapathi, idiyappam. It’s simple, tasty and makes my tummy happy whenever I make it. Whether it’s for breakfast, lunch or dinner, egg based recipes never fail to impress! It’s the kind of dish that feels comforting and satisfying, without needing any fancy ingredients. 

    Versatile : This roast pairs well with rice, chapathi, idiyappam, dosai making it a versatile recipe for breakfast, lunch or even for potluck. It can be a dry roast or also can be prepared slightly saucy by adding onion,tomatoes based on your preference. 

    Nutritious and filling : Eggs are a great source of protein, so this quick recipe will be both nutritious and filling. It is a quick fix to provide a healthy meal to your kids and family. 

    Ingredients

    Boiled eggs : Boiled eggs are the main star of the recipe. Use hard boiled eggs. It can be precooked and stored in the refrigerator. It will be useful during busy days. You can also substitute it with potato, tofu, and tempeh. 

    Seasoning : I have used regular cooking oil. You can also use coconut oil, groundnut oil or gingelly oil. For tempering mustard seeds and urad dal are used. Add a generous amount of urad dal as the main flavour of the roast comes from the golden roasted dal.

    Spices : I have used chilli powder, turmeric powder as the main spice in this recipe. You can even add garam masala powder or finely chopped green chillies based on your taste buds. 

    Salt : Salt helps to balance the overall taste and flavours.

    Egg Boiling Method

    Open pot method : Bring water to boil in a large pot. Gently add the eggs when water comes to a rolling boil. Set a timer for 10 minutes and cook. After that remove the eggs and place them in an ice cold water bowl. Then remove the shell and you are done with your perfect hard boiled eggs. 

    Instant pot / pressure cooking method : Add some water in the steamer / instant pot. Place a steamer rack and add the eggs carefully. Cover and steam for 5 to 8 minutes for hard boiled eggs. After that release the pressure, and transfer the eggs to ice cold water. 

    Prepare the eggs : Make a few small slits on the sides of the hard boiled eggs. This helps them to absorb the flavours. Also slitting the eggs helps them to prevent bursting. 

    Use non-stick pan : To avoid burning or sticking while roasting the egg, use a non-stick pan or heavy bottomed pan. 

    Aromatic base : Heat oil in a pan, add mustard seeds, generous amount of urad dal, as it adds the main nuttiness to the egg roast. Then add turmeric powder, chilli powder. Immediately add eggs, saute for a few seconds and turn off the stove. 

    Quick Egg Roast Recipe Step by Step

    Take all your ingredients
    Heat oil in a kadai
    Add in mustard seeds
    once they pop add in urad dal
    let them turn golden
    add in turmeric, salt and chilli powder
    let them bloom
    Immediately add the cooked eggs, turn off the heat
    toss well
    Serve

    Expert Tips

    • Prepare a bowl of ice cold water in advance to quickly cool the eggs after boiling. 
    • Add some ginger garlic paste or crushed garlic before adding the eggs. It aids in digestion and also adds a nice aroma to the roast. 
    • While tempering, add some fennel seeds for a sweet and aromatic flavour. 
    • Slitting the eggs helps the spices to penetrate well and also prevents them from bursting. 
    • Add some pepper powder for a deeper heat and taste. 
    • Cook in low flame as this helps to avoid burning. 
    • Garnish the egg roast with a handful of coriander leaves. 

    STORAGE 

    Store the boiled eggs in the refrigerator for a week. This can be done during the weekend and it will be helpful during busy weekdays. 

    SERVING 

    Serve these masala roasted eggs with rasam rice, chapathi, and idiyappam.

    1.What can I serve it with? 

    It pairs well with white rice, rasam rice, chapathi, dosai or even it can be used as a filling for sandwiches by mashing the boiled egg roast and mix it with mayonnaise and tomato ketchup. 

    2.How to cook perfect hard boiled eggs?

    To boil eggs perfectly, gently place the eggs in boiling water. Set a timer for 10 minutes. After that remove the eggs and cool them in ice water to make peeling easier. 

    3.How can I make it more spicy? 

    If you prefer a spicy egg roast, then add finely chopped green chilli or pepper powder while roasting. 

    4.How long do boiled eggs last in the fridge? 

    Boiled eggs with shells can stay fresh in the fridge for a week. While peeled boiled eggs stay good for 2 to 3 days. 

    Variations

    Quail egg roast : Small quail eggs are boiled and roasted in onion tomato masala. It is a flavourful recipe that goes very well with sambar rice, rasam rice, dosai and chapathi. 

    Egg pepper tawa fry : Boiled eggs are roasted on a flat tawa pan with spices pepper, chilli, which has spicy and aromatic flavours. It goes very well with pav buns, roti, jeera rice. 

    Egg bhejo : Egg bhejo is a popular Burmese street food recipe, where the boiled egg is stuffed with tangy and spicy filling with onion, chilli flakes, crushed peanut and garlic. 

    Egg bajji : Egg bajji also known as egg bonda is a popular South Indian street food recipe. It is prepared by dipping the boiled eggs in a spicy thick batter and then deep fried in oil. It is a quick evening snack recipe and it is served with coconut chutney.

    • 5 large Hard Boiled Eggs
    • 1 tbsp Coconut Oil
    • 1 tsp Mustard Seeds
    • 1 tbsp Split White Urad Dal
    • 1 tsp Red Chilli powder
    • ½ tsp Turmeric Powder
    • Salt to taste

    Instructions

    • Heat oil in a kadai. Add in mustard seeds and let them pop. Once they pop, add in urad dal and fry till golden.
    • Now add in chilli powder, salt and turmeric powder all in one go. Immediately after adding the spices, add in eggs and turn off the stove.
    • Mix well and serve with rice and rasam.

      You can also use good amount of crushed black pepper in this recipe n instead of mustard n urad dal must add a little bit of cinnamon stick n cloves.
