    Spicy French Fries Recipe with step by step pictures. Forget your regular french fries and make this spiced tossed crispy potatoes that are so flavourful. Coat potatoes with spice powders, chillies, rice flour which creates a crispy exterior. Deep fry curry leaves till crispy which is topped over the fries.

    Still if you are making french fries the old way, you have to try this version. It is my spicy french fries which has a masala spiced coating with flour. It creates a crispy exterior when fried and taste simply amazing.

    About Spicy French Fries

    Traditional french fries is just fried potato sticks in oil. Even though it sounds easy, you need to prepare the potatoes certain way to achieve crispy textured potatoes.

    Some steps include blanching the potatoes, cooling it down, putting in fridge or freezer and then frying. Some recipes even call for double frying for super crispy texture. Check my crispy roasted potatoes.

    But this recipe for spicy french fries is easy and straight forward. You need to coat the potatoes in spice powders, rice flour and gram flour. This flour coating creates the crispy texture and it stays crispy longer.

    Ingredients

    • Potatoes - choose potatoes that are good for frying like russet potatoes. Peel potatoes, cut it into sticks, wash them really well till excess starch is washed.
    • Spice Powders - I used a combination of Kashmiri chilli powder, coriander, turmeric.
    • Flour coating - use gram flour and rice flour for coating the potatoes. This creates crispy texture. You can use cornstarch also.
    • Oil - I used sunflower oil for deep frying. Any neutral tasting oil is best.

    Step by Step Pictures

    1)Take potatoes, peel off the skin using a vegetable peeler.

    2)Cut each potatoes into fries shape.

    3)Take the potatoes in a colander and rinse them really well until all starches washes away.

    4)Take strained potatoes in a mixing bowl.

    4)Add in salt, msg.

    5)Add in all the spice powders. I am using Kashmiri red chilli powder, coriander powder, turmeric powder. You can use any spices you like.

    6)Add in rice flour and gram flour.

    7)Sprinkle little water and mix well. The spices and flour should coat the potatoes evenly.

    8)Drop the potatoes in hot oil and fry till golden brown.

    9)Once fried strain the potatoes to a bowl.

    10)Now in the same oil add in curry leaves and stay back. Because curry leaves will splatter. Ensure your curry leaves doesn't have any water content.

    11)Now the curry leaves is super crispy.

    12)Strain the curry leaves using a slotted spoon and add over the fries. toss gently.

    13)Serve immediately.

    Expert Tips

    • Choose potatoes that are big in size. Peel potatoes and cut them into medium fries shape.
    • Spice powders like cumin, pepper, chat masala can be used.
    • Instead of rice flour you can use cornstarch for crispy texture.
    • Crushed ginger garlic paste can be mixed into the potatoes.

    Ingredients

    • Sunflower Oil for Deep Frying

    To Marinate Potatoes

    • 3 large Potatoes peeled and cut into fries shape
    • 2 tablespoon Kashmiri Red Chilli powder
    • 1 tablespoon Coriander powder
    • 1 teaspoon Turmeric powder
    • 4 tablespoon Rice Flour
    • 4 tablespoon Gram Flour (Besan or Chickpea Flour)
    • 2 teaspoon Salt to taste
    • ½ teaspoon MSG Optional

    For Crispy Curry Leaves

    • ½ cup Curry leaves

    Instructions
     

    • Peel potatoes and slice it in the shape of French fries. Put that in a colander and rinse well so that all starch from the potatoes goes away.
    • Take that in a bowl. Add in all ingredients given in marination. Sprinkle some water and mix well. The spices should coat each potatoes well.
    • Heat oil for deep frying and fry this in batches till golden brown. It will take around 8 to 10 minutes until crispy.
    • Strain the fried potatoes using slotted spoon on kitchen paper. Now fry some curry leaves in the same oil and put it over the potatoes. Toss well.
    • Serve hot.

      Looks like you have improved upon a classic here, good job.
      When I make french fries I use two steps. First cook them in cooler oil (300F) then drain them. Second, when ready to serve I jack up the temp to 375F and brown them. It makes perfect french fries.
      I want to try your recipe here, I bet it will be grand.
      When I started reading your title I thought you would just give a spice blend to sprinkle over the finished french fries, but this will be superb.
