    Aloo Tomato Curry

    The one curry which we go for whenever we make battura is this one. This elegant curry pairs beautifully with poori, roti or bhatura. My personal favorite is having this with bhatura. The one cool thing about this is, if you have cooked potatoes in your fridge, You could whip this in no time. I hope you will love this and let me know what you think. The combination of crispy, puffy bhatura with this tangy, spiced potato curry is just perfect. My personal favorite way to enjoy it is with freshly made, hot bhaturas that soak up all the rich flavors of the gravy.

    Why This Recipe is a Family Favourite - I love this recipe because it’s one of the first dishes I learned to make. The comforting aroma of tomatoes, turmeric, and coriander reminds me of home-cooked meals. It’s easy to customise and can be made spicy or mild depending on preference. It’s a comforting, home-style dish which requires no fancy ingredients—everything is probably already in your kitchen. The combination of soft potatoes with tomato gravy is just so good.     Tomatoes : Fresh, ripe tomatoes create a tangy, rich base for the gravy. You can also use canned tomatoes if needed.

    Green Chilies : Adds a subtle heat to the dish, but you can adjust the quantity based on your spice tolerance.

    Spice Powders - Turmeric Powder brings warmth and depth to the curry. Red Chilli Powder can be adjusted based on your spice tolerance.

    Salt & Sugar : Salt is essential to bring out the flavors of all the ingredients. A pinch of sugar balances the acidity of the tomatoes, creating a balanced taste.

    Coriander Leaves : Makes the dish more aromatic.

    Hacks

    Instead of regular potatoes, you can use baby potatoes for a different texture.

    Mustard oil can be used as it adds a unique flavor compared to regular oil.

    You can add a handful of green peas for extra color and taste. A splash of lemon juice at the end enhances the flavors.

    You can use canned tomatoes if fresh ones are not available.

    Start by cooking potatoes
     
     
    Peel em and mash them
     
    Heat oil in a kadai
     
     
    Add in onions
     
     
    Saute a little
     
     
    Add in a dash of turmeric
     
     
    some salt
     
     
    Mix well and cook till golden
     
     
    Add in tomatoes and chillies
     
     
    Saute well
     
     
    Cook till it turns mushy
     
     
    Add in some chilli powder
     
     
    Mix well
     
     
    Pour in water
     
     
    Mix that well
     
     
    add some sugar
     
     
    Bring this to a boil
     
     
    Add in mashed up potatoes
     
     
    Mix well
     
     
    Add in a good amount of coriander leaves
     
     
    Mix well
     
     
    Serve

    Expert Tips

    • If you like your curry to be more liquidy, add a little more water while cooking.
    • If you like smoky flavor, then you can roast the tomatoes and then add them.
    • You can adjust the spice level by increasing or decreasing green chilies and red chilli powder.
    • The curry thickens as it cools, so if you are reheating, then add a splash of water to bring it back to the right consistency.

    Equipment

    • Cooking pot

    Ingredients

    • 1 tbsp Oil
    • 1 large Onion peeled & sliced thinly
    • 2 no Green Chillies slit
    • 1 tsp Turmeric Powder
    • 3 large Tomatoes chopped finely
    • 1 tbsp Kashmiri Chilli Powder
    • 3 large Potatoes
    • 1 tsp Sugar
    • 1 tsp Salt or to taste
    • 3 tbsp Coriander Leaves
    • Water as needed

    Instructions

    • Cook potatoes till they are tender, peel them and mash them roughly. You can cook them in a pot or use a pressure cooker.
    • Heat oil in a kadai. Add in onions and saute for a min. Add in salt and turmeric powder and cook till they are golden brown.
    • Now add in tomatoes and green chilli. Cook this for 5 to 8 mins till they turn mushy. Now add in chilli powder and saute for a min. Pour in water and mix well. Bring this to a boil. Add in sugar and mix well.
    • Now add in the potatoes and simmer for 5 mins. Add in a handful of coriander leaves and mix well. Switch off the flame and serve with poori or roti.

      We've just come back home after visiting our family in another town. We cleared the fridge before going away, so on return there was nothing in it except onions, potatoes and tomatoes (canned). The result? This curry.

      It's probably not going to be my favourite curry ever, but it's invaluable for those empty-fridge-no-time-to-shop days. I made batturas to go with it.

      Sorry but this looks too watery. It's quite unnecessary to add this much water, the juice from the tomato will give the perfect consistency. It looks good otherwise!
