    Spicy veg mayo sandwich is a quick and delicious sandwich made with fresh vegetables, spices, onion and mayonnaise. Learn how to make this easy veg mayo sandwich with my step-by-step recipe and pictures. 

    Veg Mayonnaise Sandwich

    This is the spicy sandwich which I made for my daughter's birthday party and it was so delicious. The veggies are cooked in a Indian way with spice powders and then a dollop of mayo is added to it to give a creamy texture to it and worked well.

    About Veg Mayonnaise Sandwich

    Spicy veg mayo sandwich is one of the easiest sandwiches you can make at home. It comes together in minutes and is perfect for breakfast, evening snack or even as a quick party meal.

    The combination of spicy, flavourful vegetables and creamy mayonnaise makes it a filling and delicious sandwich that both kids and adults enjoy. 

    I make this sandwich quite often because it is so versatile. You can use any vegetables for the filling like onion, lettuce, sweet corn, peas, paneer, potato or cucumber. Every time I make it, I like to try a different combination of vegetables and seasonings for a new flavour.

    I have kept this recipe simple by serving the sandwich with fresh bread slices, but you can also toast or grill it with butter until crispy and golden. It tastes delicious both ways and can be prepared in a few minutes. 

    Another great thing about this recipe is that you can use the same filling for making burgers, wraps and rolls. In this recipe, I have shared all my tips and variations so you can easily customize it with your favorite vegetables and seasonings.

    For extra flavour, you can also add green chutney spread, chilli flakes and grated cheese to make it spicy and cheesy.

    Ingredients

    • Bread slices : Use fresh and soft bread for a tasty sandwich. White bread, brown bread, or multigrain bread all work well for this recipe. 
    • Mayonnaise : Mayonnaise gives the filling an extra creamy texture. You can use either eggless or regular mayonnaise. Both homemade and store-bought mayonnaise work perfectly. 
    • Oil : Oil used to saute the vegetables until soft and flavourful. You can use any cooking oil of your choice. 
    • Fennel seeds : Fennel seeds add a nice aroma to the filling. 
    • Vegetables : Onion, cabbage, carrot and capsicum are used as the base of the filling. You can also add vegetables like sweet corn, cucumber, tomato, paneer or potato if preferred. 
    • Spice powder : Chilli powder, garam masala powder and turmeric powder are added for both color and flavour. Adjust the spice level according to your preference. 
    • Salt & Sugar : Salt and sugar used to season the filling. It balances the overall taste and flavour of the filling. 

    Step by Step Pictures

    1)Heat oil in a pan, add in fennel seeds and let them sizzle. Add in onions.

    2)Add in salt and sugar.

    3)Saute the onions till it gets light golden in colour.

    4)Now add in vegetables of your choice. I am using cabbage, carrots and bell peppers.

    5)Cover and cook on low heat till it is cooked. It will take around 10 minutes.

    6)Now add in chilli powder, garam masala powder and turmeric powder and saute for 30 seconds.

    7)This is your sauted vegetables.

    8)Remove it to a bowl and let it cool down completely. Once the vegetable mixture is cool, add in mayo and mix well.

    9)Now your creamy and spicy vegetable filling is ready.

    10)Take bread slices and dollop a good amount of vegetable filling on top, spread this over it evenly.

    11)Cover with another slice and cut in diagonals.

    12)Serve.

    Expert Tips

    • Finely chop the vegetables so they mix evenly and stay inside the bread without falling apart. 
    • Allow the vegetable filling to cool completely before mixing the mayonnaise. This prevents the mayo from melting and keeps the filling creamy.
    • For extra flavour, add grated cheese or cheese slices before assembling the sandwich. 
    • Toast the sandwich with butter on tawa or grill it until golden crispy.
    • To make it healthier, use whole wheat or multigrain bread and low fat or eggless mayonnaise. 
    • Add sweet corn, potatoes, paneer to make the sandwich more filling.
    • To make the sandwich extra spicy, you can add chilli flakes, black pepper or tandoori mayonnaise. 

    Storage and Serving

    Store the leftover vegetable filling in an airtight container. It stays well in the refrigerator for 2 to 3 days. 

    Serve the spicy veg mayo sandwich alongside with tomato ketchup, green chutney or cheesy sauce for a delicious meal or a light snack.

    Ingredients

    • 12 slices White Bread
    • 1 cup Mayonnaise

    For Vegetable Filling

    • 1 tablespoon Peanut Oil
    • 1 teaspoon Fennel Seeds
    • 1 large Onions peeled and sliced thinly
    • 1 teaspoon Salt or to taste
    • 1 teaspoon Sugar
    • 2 cups Cabbage sliced thinly
    • 1 large Carrots peeled and grated
    • ½ medium Capsicum sliced thinly
    • 1 teaspoon Red Chilli Powder
    • 1 teaspoon Garam Masala Powder
    • ½ teaspoon Turmeric Powder

    Instructions

      Aarthi - after putting spread will it be better to toast in sw maker or it better plain bread without toasting? - Neeraja

      @Unknownit taste good toasted or not toasted as well. if your bread is soft no need to toast..if it is little hard, toast it with butter
