Vegetarian Lasagna Recipe – Veggie & Cheese Lasagna Recipe

Lasagna is one of the most requested recipe in yummy tummy, the reason why it took me this long is because I know that if i have to post that recipe, it should be using homemade lasagna sheet recipe..I fixed the day today and started the work in the morning itself. I made a batch of vegan homemade pasta and lasagna sheets and made this delicious lasagna..

I also made a batch of Spinach Mushroom lasagna.. And i will soon make a traditional egg lasagna sheet and share some non veg version of this..This veggie cheese lasagna is a classic combination and it worked pretty great. The taste was awesome..Hope you will give this a try and let me know how it turns out for you..

Preparation Time : 15 mins
Cooking Time : 15 to 20 mins
Baking Time : 45 to 50 mins
Serves : 4

Ingredients:

Lasagna Sheets – 10 to 12 ( I used homemade, cook it first)
Cheese – 1/2 cup grated ( i used mozarella)
Parsley finely chopped as needed

For Filling:
Oil – 1 tblspn
Garlic – 3 cloves chopped finely
Onion – 1 medium size chopped finely
Carrot – 1 medium size chopped finely
Capsicum / Bell Peppers – 1 chopped finely
Mushrooms – 6 to 8 chopped finely
Tomatoes – 4 large chopped finely
Salt to taste
Sugar – 1 tsp
Red Chilli Flakes – 2 tsp or to taste
Dried Basil – 1 tsp
Water – 1/2 cup
Parsley / Coriander leaves a handful chopped finely

For White Sauce:
Butter – 4 tblspn
All Purpose Flour / Maida – 4 tblspn
Milk – 1/2 liter
Salt to taste
Pepper or Red Chilli flakes to taste
Cheese – 1 cup grated ( i used mozarella)


Method:

Start by cooking lasagna, boil lots of water, add salt and drop pasta in boiling water and cook for 3 to 4 mins. Drain it lay it in a plate.

Start by making the filling. Heat oil in a pan, add in garlic and onions. Saute for a min.

Add in all the veggies including the mushrooms and give a quick toss, saute till the raw smell leaves from it.

Add in tomatoes and mix well. Cook till it gets mushy. It will take around 10 mins.

Add in salt,sugar red chilli flakes. Give a mix. Add in basil and mix well.

Add little water to make a sauce, dont add too much water. Simmer for 5 more mins..

Now make the white sauce. Heat butter and flour in a pan and mix well for 2 mins or so. Add in milk slowly and keep whisking so no lumps are formed. Now keep whisking till it get thick.

Add in salt, pepper or chilli flakes and cheese. Mix well Sauce done.

Preheat oven to 180 degree C.

Now take the baking pan and spoon some veggie filling in the bottom. Lay pasta sheets and spoon some more veggiefilling, now spoon over some white sauce and lay pasta sheets..Repeat this till you end up with pasta sheet. Now spoon a final layer of cheese sauce and grate lots of cheese on top. Sprinkle parsley over it and cover the pan with foil. Pop this in oven and bake for 45 to 50 mins.

Remove it from oven and let it stand for 15 mins before slicing and serving.

Pictorial:

First make a batch of fresh lasagna using this recipe
or use storebought no cook lasagna sheets

Cook the pasta in salted boiling water  for 3 to 4 min, 
drain them and place it in a plate..
now lets make white sauce
grate some cheese.
heat some butter in a sauce pan
add in flour
saute for 2 to 3 mins till it is well roasted
slowly add in milk
keep whisking while you add..so no lumps are formed
keep cooking
it will get thick
now add in salt
you can add pepper..i used some red chilli flakes
now add in cheese
mix well
it will all get gloppy because of cheese
set aside

Take your ingredients for veggie filling

heat oil in a pan and add in garlic

Add in onions and saute for a min

Add in the veggies

mix that well

Cook that for 4 to 5 mins till raw smell leaves from it

Add in tomatoes

Mix that around

cook till it gets mushy

add in salt

add in sugar

add in chilli flakes

Take your basil

Add a tsp of that in

give a mix

Add litle water to make a sauce 

Boil it for 5 mins or so..

add in chopped parsley

mix well..

Now take your baking pan

Spoon some of the veggie sauce

Lay the cooked lasagna

spoon some more sauce

spoon the cheese sauce

Dont over do it

Now lay the lasagna sheets

spread with the veggie sauce

spoon the cheese sauce over

lay your pasta sheets

spread with veggies

now cheese sauce

finally lay some cooked lasagna sheets

spread cheese sauce over it

grate lots of cheese over it

sprinkle with parsley or coriander leaves

    Y is the top layer looking so dark? is it over baked?

      Don’t add grated cheese when you bake the lasagna, after you take out the cooked lasagna then spread the cheese and broil till the cheese layer is golden brown, like you see in pizza. This lasagna recipe is good the only problem is that she added cheese before baking, in 40-45 minutes cheese got overcooked and burnt a bit.

    Can we keep this in fridge after setting everything in bowl and bake later when our guest came…plz cnfirm for how long I can keep this in fridge before baking???

    Yesterday I tried this recipe. It came out very well, but mine is not set well (I may served before it set well or I used more cheese sauce). The taste was awesome. My husband likes this very much. Thank you for the pictorial representation which is really helpful.
