    Thai Veg Green Curry Recipe with step by step pictures. This is a wonderful recipes of Veg Thai Green Curry with vegetables. It is loaded with the choicest vegetables making it spicy.

    Thai Veg Green Curry

    I love thai foods, they are so flavourful and has a complete different taste and aroma than our foods..I do make them quite often. The one thing that puts me off is the availablity of thai ingredients in my place. I couldn't get my hands on those beautiful galangal, lemon grass and stuffs like that..So when i want to create a thai recipe, i either have to purchase them online or modify the recipe according to the available ingredients.

    Ingredients for Thai Veg Green Curry

    • Oil - 1 tbsp + 1 tbsp
    • Thai Green Curry Paste - 3 tbsp ( i used store bought )
    • Coconut Milk - 1.5 cup
    • Vegetables - around 3 cups ( i used carrots,brinjal,beans, bell peppers,broccoli)
    • Green Chilli - 2 slit or to taste
    • Tomato - 1 chopped
    • Water as needed
    • Salt to taste
    • Sugar - ½ tsp or to taste

    For Green Curry Paste:

    • Green Chillies - 6 to 8
    • Shallots / Sambar Onion - 3
    • Ginger - 3 tbsp chopped
    • Garlic - 3 tbsp chopped
    • Coriander leaves + Stalks - 1 cup
    • Lemongrass Stalks - 2 chopped
    • Kaffir Lime Skin - 1 peel
    • Kaffir Lime Leaves - 4
    • Galangal - 1 tbsp chopped
    • Lemon Juice - 2 tblspn
    • Coriander Seeds - 1 tbsp
    • Cumin Seeds - 1 tsp
    • Whole Pepper - 1 tsp
    • Soy Sauce - 1 tbsp
    • Oil - 3 tbsp
    • Salt to taste

    Now lets talk about this curry. Luckily during one of shopping trip, i found those chings thai red and green curry paste. Immediately with no delay i picked them. When i used them, i never tasted their preserved taste. It tasted so fresh and flavourful.. i have already used so many products of them so i am confident when i got them.

    And from that day, i have been creating lots of recipes using them and every thing turned out really good..For all those you can easily find thai ingredients, i am sharing the recipe for green curry paste below so you can make them from scratch..GOOD LUCK..

    How to Make Thai Veg Green Curry

    1. If you are making thai curry paste from scratch, take all the mentioned ingredients in a blender and puree till smooth.
    2. Heat 1 tbsp of oil in a pan, add in all veggies and toss well for 5 to 7 mins till the veggies are half cooked and got little color. Remove them to a
      bowl.
    3. Now in the same pot, add in 1 more tbsp of oil and add in curry paste. Cook this for 3 mins or so till it has darkened and oil separates from this.
    4. Now add in half of the coconut milk and cook this till oil separates from this.
    5. Add in the veggies and stir that in the curry for 5 mins.
    6. Now add in remaining coconut milk and water if needed and mix well.
    7. Season with salt and sugar,
    8. Bring to a simmer and mix well. Cook till veggies are done.
    9. Now add in the tomatoes and simmer for further 2 mins.
    10. Serve with hot rice..

    Ingredients
      

    • 1 tbsp + 1 tbsp Oil
    • 3 tbsp Thai Green Curry Paste i used store bought
    • 1.5 cup Coconut Milk
    • 3 cups Vegetables i used carrots,brinjal,beans, bell peppers,broccoli
    • 2 slit or to taste Green Chilli
    • 1 Tomato chopped
    • Water as needed
    • Salt to taste
    • ½ tsp or to taste Sugar
    • For Green Curry Paste:

    Take any of your favourite veggies..I took all the bits
    and pieces i had in the fridge and used them

    Prepare your veggies by chopping them

    You need couple more ingredients, which is thai
    green curry paste and coconut milk

    Heat oil in a pan

    add in all the veggies except tomatoes..I added the
    green chillies as well

    now saute them really well

    This sauteing will take the raw smell from the veggies
    and give the veggies a little colour

    look now the veggies have got a bit of colour on them
    and they have cooked half the way through

    remove them to a bowl

    now i used this green curry paste..But you can make your own..I couldn't find so many thai ingredients in my place, so i took the easy step and bought one..

    Now heat a bit more oil in the same pot

    add a good three tblspn of curry paste..and it depends on
     your taste..

    now you have to saute them well in the oil

    look the colour has darkened and it looks a little grainy this is a good things..Because this way the flavours has deepened..

    at this point add the veggies back in

    stir fry the veggies for atlease 5 mins in the curry paste..this makes the veggies taste really good

      I am silent reader and never comment now i really love it ,I have been thinking about cooking Thai food for so long and
      now i will do it after seeing This post .I just have one Query is this
      Thai curry Paste is spicy ?how does it taste? does it taste like our indian curry ? Go green keep posting Vegetarian dishes. Love your Blog and Ideas !!!! 🙂

      @Vijayait is similar to indian curry but it has lots of unique flavours in it

      This curry looks really good. I've been wanting to branch out with my cooking lately, so maybe I'll try making this. Is it hard to find green curry paste? I might have to take my husband out to a few thai restaurants first and make sure that he likes that food. http://www.laperlerestaurant.ca/en/
