I love thai foods, they are so flavourful and has a complete different taste and aroma than our foods..I do make them quite often. The one thing that puts me off is the availablity of thai ingredients in my place. I couldn't get my hands on those beautiful galangal, lemon grass and stuffs like that..So when i want to create a thai recipe, i either have to purchase them online or modify the recipe according to the available ingredients.

Ingredients for Thai Veg Green Curry
- Oil - 1 tbsp + 1 tbsp
- Thai Green Curry Paste - 3 tbsp ( i used store bought )
- Coconut Milk - 1.5 cup
- Vegetables - around 3 cups ( i used carrots,brinjal,beans, bell peppers,broccoli)
- Green Chilli - 2 slit or to taste
- Tomato - 1 chopped
- Water as needed
- Salt to taste
- Sugar - ½ tsp or to taste
For Green Curry Paste:
- Green Chillies - 6 to 8
- Shallots / Sambar Onion - 3
- Ginger - 3 tbsp chopped
- Garlic - 3 tbsp chopped
- Coriander leaves + Stalks - 1 cup
- Lemongrass Stalks - 2 chopped
- Kaffir Lime Skin - 1 peel
- Kaffir Lime Leaves - 4
- Galangal - 1 tbsp chopped
- Lemon Juice - 2 tblspn
- Coriander Seeds - 1 tbsp
- Cumin Seeds - 1 tsp
- Whole Pepper - 1 tsp
- Soy Sauce - 1 tbsp
- Oil - 3 tbsp
- Salt to taste
Now lets talk about this curry. Luckily during one of shopping trip, i found those chings thai red and green curry paste. Immediately with no delay i picked them. When i used them, i never tasted their preserved taste. It tasted so fresh and flavourful.. i have already used so many products of them so i am confident when i got them.
P.S: This is not a paid advertising, i simply loved their product, so i am sharing it..
How to Make Thai Veg Green Curry
- If you are making thai curry paste from scratch, take all the mentioned ingredients in a blender and puree till smooth.
- Heat 1 tbsp of oil in a pan, add in all veggies and toss well for 5 to 7 mins till the veggies are half cooked and got little color. Remove them to a
bowl. - Now in the same pot, add in 1 more tbsp of oil and add in curry paste. Cook this for 3 mins or so till it has darkened and oil separates from this.
- Now add in half of the coconut milk and cook this till oil separates from this.
- Add in the veggies and stir that in the curry for 5 mins.
- Now add in remaining coconut milk and water if needed and mix well.
- Season with salt and sugar,
- Bring to a simmer and mix well. Cook till veggies are done.
- Now add in the tomatoes and simmer for further 2 mins.
- Serve with hot rice..

now i used this green curry paste..But you can make your own..I couldn't find so many thai ingredients in my place, so i took the easy step and bought one.. |
look the colour has darkened and it looks a little grainy this is a good things..Because this way the flavours has deepened.. |
stir fry the veggies for atlease 5 mins in the curry paste..this makes the veggies taste really good |
