    Turkish Semolina Halwa

    Turkish Semolina Halwa is a simple dessert made by toasting semolina till toasty and golden. This halwa taste so nutty because of the toasting as well as the nuts added in it.

    I came across this recipe when i was surfing through youtube. I fell in love with it immediately and tried it. it turned out super delicious.

    This halwa is similar to indian sooji halwa or rava kesari

    To Make Turkish Semolina Halwa all you need is

    • Semolina
    • Butter
    • Sugar
    • Mixed Nuts
    • Milk
    • Rose Extract
    • Optional (molasses)

    Turkish Semolina Halwa

    The original recipe suggest to add grape molasses for colour. Since i don't have any, I toasted the sooji till dark brown also i used brown sugar instead of normal sugar. So the halwa turned beautiful golden colour.

    I garnished the halwa with crushed pistachios for a beautiful look. Also i served it in my authentic turkish plates and bowl which i bought recently.

    Turkish Semolina Halwa

    HOW TO MAKE TURKISH SEMOLINA HALWA

    Toasting: Toast the semolina in butter till golden brown. Add chopped nuts and toast as well.

    Syrup: boil milk, water, sugar till it comes to a boil.

    Mixing: pour the water mix into the semolina and mix well. Cook till it is cooked.

    Flavour: I used rose extract which is optional.

    Serving: serve halwa hot, warm or cold.

    • Toast the semolina in butter till it gets toasty and golden brown.
    • You can use milk instead of water.
    • Traditionally pine nuts are used. But you can use any nuts of your choice.
    • Finely chopped walnuts adds nice crunch to the halwa
    • Addition of rose extract is optional. You can skip if needed.

    SERVING SUGGESTIONS

    Serve this halwa hot, warm or cold with a scoop of vanilla ice cream.

    Ingredients

    • ½ cup Semolina
    • ¾ cup Brown Sugar
    • 1 cup Water
    • ½ cup Milk
    • ¼ cup Butter
    • 3 tbsp Oil
    • ¼ cup Mixed Nuts
    • Few Drops Rose Extract

    Instructions

    • Heat butter and oil in a frying pan, add in semolina and roast till it gets golden.
    • Add in chopped nuts and mix well. Fry till golden.
    • Take milk, sugar, water in a sauce pan. Bring it to a boil.
    • Pour the hot milk mix into the semolina and mix well.
    • Stir till it thickens.
    • Add in rose extract ad mix well.
    • Serve hot.

    Pictorial:

    1)Start by making sugar syrup. Take brown sugar in a sauce pan.

    2)Add in water

    3)Add in milk

    4)Bring it to a boil and set aside.

    5)Heat butter and little oil in a frying pan.

    6)Add in semolina or sooji.

    7)Add in little all purpose flour

    8)Mix well

    9)Keep cooking till it gets golden brown.

    10)Add in finely chopped nuts

    11)Mix well and cook till it gets toasty.

    12) It is toasty.

    13)This is the colour you are looking for.

    14)Add in the milk and water mix.

    15)Mix well

    16)Cook till it thickens.

    17)Now the halwa is almost done.

    20)Add few drops of rose extract. This is purely optional.

    21)Mix well

    22)Serve warm.
