    Mughlai Vegetable Pulao with Fried Bread Recipe with step by step picture. This is made with Basmati Rice and Vegetables. Vegetable Pulao filled with fried bread cubes and vegetables.

    Mughlai Vegetable Pulao with Fried Bread

    This recipe is from vahrehvah.com and it is simply delicious. The fried bread add a nice taste and texture to it and it taste amazing. Hubby loves fried bread in pulav or biryani, so i added a generous amount of it.

    It has a really mild flavour and taste to it. So good and really delicious..

    Ingredients for Mughlai Vegetable Pulao

    • Basmati Rice - 1 cup
    • Ghee - 2 tblspn
    • Fennel Seeds /  Sombu / Saunf - 1 tsp
    • Cumin Seeds / Jeerakam - 1 tsp
    • Cinnamon / Pattai - 2 cm piece
    • Cardamom / Yelakai - 3
    • Cloves / Krambu - 2
    • Bay Leaf -  1
    • Black Stone Flower / Kal Paasi -1 piece
    • Mace - 1
    • Onion - 1 large sliced thinly
    • Ginger Garlic Paste - 1 tbsp
    • Green Chillies - 5 to 6 slit
    • Coriander leaves - ¼ cup chopped finely
    • Mint Leaves - ¼ cup chopped finely
    • Carrot - 1 medium cubed
    • Peas - ½ cup
    • Beans - 5 chopped
    • Potato - 1 peeled and cubed
    • Yogurt - ½ cup
    • Water - 1.5 cup
    • Salt to taste
    • Bread Slices - 3 to 4 cubed

    How to make Mughlai Vegetable Pulao

    1. Wash and soak rice for 30 mins. Drain and set aside.
    2. Heat oil or ghee in a pan and add in all whole spices. Let them sizzle for a min.
    3. Add in onions and saute till golden brown.
    4. Add in green chillies and ginger garlic paste and saute for a min.
    5. Add in veggies and toss well in oil till it is cooked and got nice colour.
    6. Add in coriander, mint leaves and mix well.
    7. Add in yogurt and mix well.
    8. Add in water and season with salt. Bring it to boil.
    9. Add in rice and mix well.Cover with a lid and simmer to the lowest possible. Cook for 20mins. 
    10. When the rice is cooking, deep fry bread in oil till golden, drain and set aside.
    11. Turn off the heat and fluff the rice with a fork. Add in fried bread into this and mix gently.
    12. cover with a lid and let it sit for 15 mins.
    13. Now serve.

    Ingredients

    • 1 cup Basmati Rice
    • 2 tbsp Ghee
    • 1 tsp Fennel Seeds
    • 1 tsp Cumin Seeds
    • 2 cm Cinnamon Stick
    • 3 Cardamom
    • 2 Cloves
    • 1 Bay Leaf
    • 1 piece Black Stone Flower (Kal Paasi)
    • 1 Mace
    • 1 large Onion sliced thinly
    • 1 tbsp Ginger Garlic Paste
    • 5 to 6 Green Chillies slit
    • ¼ cup Coriander leaves chopped finely
    • ¼ cup Mint Leaves chopped finely
    • 1 medium Carrot cubed
    • ½ cup Peas
    • 5 Beans chopped
    • 1 Potato peeled and cubed
    • ½ cup Yogurt
    • 1.5 cup Water
    • Salt to taste
    • 3 to 4 slices Bread Slices cubed

    Instructions

    Take all your ingredients
     
     
    Heat ghee in a pressure cooker
     
     
    add in whole spices
     
     
    let them sizzle
     
     
     
    add in sliced onions
     
     
    sprinkle little salt
     
     
    fry them well
     
     
    saute them till golden
     
     
    add in ginger garlic paste
     
     
    mix well for a min or so
     
     
    add in veggies
     
     
    toss well
     
     
    fry it for few mins
     
     
    add in chillies, coriander and mint leaves
     
     
    mix well
     
     
    add in yogurt
     
     
    mix well
     
     
    add in water
     
     
    bring it to a boil
     
     
    add in drained rice
     
     
     
     
     
    mix well and simmer the pan till rice is done
     
     
    when rice is cooking, take your bread slices
     
     
    cut it into small cubes
     
     
    fry in oil
     
     
    deep fry till golden
     
     
    set aside
     
     
    now the rice is done
     
     
    i transfered it to a bowl
     
     
    added the bread cubes
     
     
    sprinkled some more coriander leaves
     
     
    toss well
     
     
    cover with a lid and set aside for 15 mins
     
     
    now serve

      Hi arthi when we usually make rice we use 1 cup of water for 1 cup rice .. but here in this recipe is it ok to add 1.5 cups water..pls confirm. Thanks.
