    Aam Ka Panna Recipe (Raw Mango Drink)

    Aam ka panna is a classic Indian summer drink made with raw mangoes, black salt, roasted cumin powder and jaggery. This traditional drink is a staple in my home, especially during hot summer. This drink keeps the body hydrated and supports digestion. Serve this chilled with ice cold water and ice cubes, which makes a perfect refreshment for summer days. 

    Aam Ka Panna Recipe (Raw Mango Drink)

    This has become one of my latest thirst quencher on this hot summer days. Love it so much, it is pretty easy to make and once you make the preserve, you can keep it for 2 weeks in fridge or more if you freeze them individually in ice cube trays.

    Try to use little sour mangoes for this which has the tart taste which balances nice with the sugar and the spices. If your mangoes are not that tart, you can add extra lemon juice in this. You can even add some crushed mint leaves in this for more flavour. Check my mango lassi.

    About Aam Ka Panna Recipe

    Summer is the perfect time to enjoy cool and refreshing drinks and Aam ka panna is one of my favorite. This traditional Indian drink is made using raw mango, jaggery, black salt, roasted cumin powder and fresh mint leaves.

    You can prepare aam ka panna by boiling, steaming or pressure cooking the raw mangoes. In this method, I pressure cooked the mangoes with a little water until soft, then cooled, peeled and the pulp is extracted.

    The pulp is mixed with jaggery, roasted cumin powder, and black salt to create a refreshing drink that can be enjoyed anytime.

    Aam ka panna also known as raw mango drink or maangai panna is tasty but also very cooling for the body. It helps beat the heat, keeps you hydrated and works as a great thirst quencher. The spices used in the drink like cumin powder, black salt helps in digestion and help reduce bloating.

    During hot days, making fresh drinks at home is always a better choice than store bought options. This homemade aam ka panna is free from preservatives and tastes more natural which makes it a healthy drink during mango season. 

    You can also adjust the taste according to your preference, which makes it a versatile and enjoyable drink for summer.

    Ingredients

    • Raw mango : Raw mango is the main ingredient of aam ka panna. It gives the drink its tangy, sour taste and refreshing flavour. Use good quality raw mango of any variety of your choice for a thick and pulpy texture. 
    • Black salt : Black salt is added for taste and to balance the flavours of mango. It gives a mild salty, tangy flavour and also helps in digestion. 
    • Jaggery : Jaggery is a natural sweetener used to add mild sweetness to the drink and to balance the sourness of raw mango. 
    • Roasted cumin powder : Roasted cumin powder gives a warm, smoky aroma. It adds a slightly earthy taste and makes the drink more flavourful and refreshing. 
    • Mint leaves : Mint leaves are added for freshness. It instantly gives a refreshing flavor and makes the drink more cooling. 
    • Ice cubes & Ice water ( optional ) : Ice cubes and ice water are used while serving. They make the drink extra cold and refreshing. 

    Step by Step Pictures

    1)You need a raw mango. Wash them really well. No need to peel the skin of the raw mango.

    2)Cut it and take it in a pressure cooker. You can even add them whole in pressure cooker.

    3)Pour enough water to cover the raw mango ¼ way.

    4)Cover with pressure cooker lid and pressure cook for 4 to 5 whistle until the raw mango is completely cooked.

    5)Once the mango is cooked, allow them to cool completely before scooping out the flesh from the raw mangoes. Discard the peel.

    6)Take the mango pulp. Add the leftover liquid from cooker when cooking mango.

    7)Puree till smooth.

    8)Now add in black salt.

    9)Add in sugar or jaggery to taste.

    10)Add in roasted cumin powder.

    11)Mix this really well. taste and adjust the sweetness and spices accordingly. This is your mango drink mixture. Place this in fridge so it cools completely.

    12)Pour the mango pulp in a jug.

    13)Pour enough cold water and mix well.

    14)Add few sprigs of mint leaves. Chill this drink in fridge for few hours so it gets cold.

    15)Enjoy this with tons of ice cubes.


    Expert Tips

    • Always use raw, firm green mangoes for the best tangy and refreshing taste.
    • Cook the mangoes until soft, so the pulp blends easily and gives a smooth texture to the drink. 
    • Adjust the jaggery based on how sour your mangoes are for a balanced sweet and tangy flavour. 
    • For best taste and aroma, always use freshly roasted cumin powder.

    Storage and Serving

    Store the mango concentrate in a clean airtight container or bottle. Keep it refrigerated and use within a week for best taste. 

    Serve this aam ka panna chilled for a refreshing summer drink. Add plenty of ice cubes to enhance the cooling effect and garnish with fresh mint leaves before serving. 

    FAQ 

    Q. Can I skip jaggery ? 

    Yes, you can skip jaggery and use sugar or any other sweetener of your choice. However, jaggery gives a more traditional and authentic taste to the drink. 

    Q. Why is my panna too thick ? 

    If the panna turns too thick, add little more water while blending or mixing the concentrate until you reach the desired consistency. 

    Q. Can I store the mango pulp ? 

    Yes, you can prepare and store the mango pulp concentrate in advance. Keep it refrigerated and mix it with water whenever you are ready to serve a fresh glass of Aam ka panna.

    Ingredients
      

    For Mango Panna (Pressure cooking)

    • 1 large Raw Mango
    • 1 cup Water

    Flavourings to Use

    • 2 teaspoon Black Salt
    • 1 cup Sugar or Jaggery
    • 1½ teaspoon Roasted Cumin Powder

    To Serve

    • 1 cup Ice Cubes for serving
    • 4 cups Cold Water
    • 2 sprig Fresh Mint Leaves for serving

    Instructions
     

    • Take mango, cut them into big pieces, take them in pressure cooker. Add in 1 cup of water. Cover and pressure cook for 5 whistle., simmer the flame for 5 mins.
    • Turn off the heat and let the steam go all by itself. Open the cooker and let the mango cool down.
    • Now take the mangoes out and remove the pulp from it using a spoon into a bowl, add the cooking liquid from pressure cooker as well.
    • Now take mango pulp in a blender and puree till smooth.
    • Take it in a bowl, add in sugar, black salt, cumin powder and mix well. Put this in fridge and let it chill.
    • When serving add required amount of syrup in a jug, top with ice cubes and ice water. Mix really well and serve.

    Notes

    • Once you make the preserve, you can keep it for 2 weeks in fridge or more if you freeze them individually in ice cube trays.
    • Try to use little sour mangoes for this which has the tart taste which balances nice with the sugar and the spices.
    • If your mangoes are not that tart, you can add extra lemon juice in this.
    • You can even add some crushed mint leaves in this for more flavour.
    • Cooking mangoes with skin is important, this make the flavour of raw mango stands out.
    • You can add jaggery instead of sugar in this
