Honestly, I ended up loving this fish even more than the Indian varieties I usually cook with. I enjoyed it just by itself, without any fuss, and that says a lot. It was incredibly clean, fresh-tasting, and perfectly flaky with juicy flesh that melted in the mouth. Every bite let the natural flavour of the fish shine through, and it was truly yum.

    About Grilled Fish

Fish is a delicate protein (seafood), it is important to handle it just right to get perfect grilled fish every time. Cooking fish in a hot grill makes it so flavorful than pan frying or cooking in oven. This basic involves basic technique which can be followed by anyone.

The marination for the fish is very basic and simple. I used lemon juice which is very important because it adds fresh taste. And I added ginger and garlic to remove any fishy taste. Chillies for heat and coriander leaves for refreshing herby hit.

For making grilled fish, fish like tilapia, salmon, mahi mahi, trout, sole or even flounder are excellent choice. Choose fish which is slightly firm, white fleshed for best result.

If you are using grill pan, it is important to use nonstick. Because how well seasoned your cast iron can be, fish tends to stick. So I use my nonstick pan. But for beginner cooks, I suggest to use cast iron skillet or nonstick skillet for best results.

    Ingredients

    • Fish - Choose fish which is slightly firm, white fleshed for best result. For making grilled fish, fish like tilapia, salmon, mahi mahi, trout, sole or even flounder are excellent choice.
    • Lemon Juice - Main ingredient to add fresh zingy taste and fresh flavor.
    • Herbs - I used coriander leaves. You can use basil, parsley or cilantro too.
    • Red Chilli Flakes - totally optional, but adds a heat to the fish.
    • Ginger & Garlic - I use fresh ginger and garlic paste, which removes any fish taste and makes the grilled fish more tasty.
    • Seasoning - Use salt and black pepper powder.

    Step by Step Pictures

    Marination

1)Take cleaned fish fillets, pat them dry with paper towel. Use a sharp knife to make deep slits all over the fish which makes the marination penetrate into the fish. Set aside.

Lets make marination for fish. Take lemon juice in a bowl.

2)Add in red chilli flakes, coriander leaves, ginger and garlic paste.

3)Add in salt and black pepper powder.

    4)Add in olive oil.

5)Mix this really well. This is your marination. Taste and check for seasoning and lemon juice.

    Marinate Fish

6)Add the fish in this marination. Coat it well with marinate on all sides.

7)Cover with plastic wrap and and let it marinate for 30 minutes in fridge. Remove the fish before 30 minutes of grilling so it will come to room temperature.

    Grilling Fish

8)Heat a nonstick grill pan, cast iron skillet or any nonstick skillet on high heat and oil it generously. It is important to use nonstick for grilling fish. So the fish skin doesn't stick to the pan.

Once the pan is hot. Place fish in the pan and let it cook for 3 minute on medium high heat.

9)Now flip over and cook for another 2 mins. Thats it fish is cooked. If you are using small fish, the cooking time will be less.

10)Gently remove the fish and serve hot with lemon wedges and steamed vegetables or rice.

    Expert Tips

    • Choose firm fish mostly white fleshed for best results.
    • Fish doesn't need heavy spices, But you can experiment with the marination.
    • Allow fish to marinate for 30 minutes before grilling.
    • Use nonstick grill pan or cast iron skillet or nonstick pan for cooking.
    • Use little oil when grilling.
