    Croquettes are my favourite..I love the creamy interior and the crispy exterior which is the character of a croquettes..This version is my favourite of all croquettes i ever made..Hubby who is fussy about cheese loved it so much, the corn and cheese just tasted yummy together..I have few more croquettes recipe coming up, so stay tuned..

    This one i made and served it with a cup of tea..You dont need any dipping sauce for it, but tomato ketchup or sweet chilli sauce or my garlic sauce taste fantastic with this..And this is great for kids who love sweet corn so much.They will love it for sure..

    Preparation Time : 10 mins
    Cooking Time : 20 mins
    Makes : 12 to 15 croquettes


    Ingredients:

    Butter - 1 tsp + 1 tblspn
    Sweet corn - 1 cup ( i used frozen)
    All Purpose Flour / Maida - 3 tblspn
    Milk - 1 cup
    Cheese - ½ cup grated
    Red Chilli flakes - 1 tsp
    Coriander leaves - 2 tblspn finely chopped
    Salt to taste
    Oil for deep frying
    Sooji / Rava / Semolina - ½ cup


    Method:

    Heat 1 tsp butter in a pan, add in corn and saute till cooked for around 2 mins. Remove this to a mixer and puree coarsely. 

    Now in the same pan, add in 1 tblspn of butter and add in flour to it and saute for 2 mins or so.

    Add in milk and keep mixing till it comes together.

    Add in corn and fold well. Add in cheese and mix well.

    Add in salt, chilli flakes, coriander leaves and mix well.

    Now remove this to a bowl and let it cool down.

    Take small portion from this and shape it into ball. Flatten it slightly, roll it in sooji and arrange it in a plate. Chill this for 30 mins.

    Now heat oil for deep frying. Deep fry till golden.

    Drain onto some paper towel.

    Serve with ketchup.

    mix well till it comes to a dough

    remove to a bowl

    take rava or sooji in a bowl

    coat this with sooji

    repeat this for all the croquettes

    chill it for 30 mins

    fry them

    flip over and fry till golden

    drain and serve

      Hi Aarthi,Can we bake this?Instead of frying in oil? if so in which mode.do we have to preheat or something? Pl suggest.
