Crispy Potato Wedges Recipe

Potato wedges, so delicious with a lovely crunchy coating which has lots of spices and taste so crispy and yummy.

I added lots of herbs in this to make it very flavourful. But you can use just salt, pepper and oregano. Coating the potatoes in flour mix will make it so crispy. I used buttermilk for the wet coating, you can use egg as well. 

Many people precook potatoes first, but i dont do that. I just drop them and fry in the oil, it does cook the potatoes. the potatoes are crispy outside and fluffy in the middle.

Preparation Time : 10 mins
Cooking Time : 15 mins 
Serves: 4

Ingredients:

Medium Small Potatoes – 6
Buttermilk or Yogurt – 1/2 cup (dilute yogurt with some water)
All Purpose Flour / Maida – 3/4 cup
Oil for Deep Frying

For Spice Mix:

Parsley – 1 tsp
Basil – 1 tsp
Rosemary – 1 tsp
Oregano – 1 tsp
Chilli Flakes – 2 tsp
Marjoram – 1 tsp
Salt to taste
Pepper – 1 tsp
Sugar – 1/2 tsp
Citric Acid – a pinch

Method:

Take all the spice mix in a blender and pulse it few times. Set aside.

Now take buttermilk and flour in separate bowls, add half spice into buttermilk and other half into flour. 

Now take your potatoes, wash them well. Cut it into wedges. 

First dip it in buttermilk and then in flour. Set aside in a wire rack so it dries a little.

Heat oil for deep frying, drop it in hot oil and fry on high heat for few mins, then reduce the heat and cook for few more mins. It will take around 5 to 7 mins.

Drain it on some paper towel. 

Serve.

take all your ingredients
scrub potatoes really well
first make spice mix, take salt, sugar and pepper in a blender
add a pinch of citric acid
add in chilli flakes or chilli powder
add in some marjoram
add in parsley
add in basil
add in some rosemary
now add in oregano
pulse few times
now it is done
take buttermilk in a bowl
add in half the spice mix in this
mix well
take flour in a bowl
add in remaining spice mix in
mix well
now take your potatoes
cut it in half
like this
now cut into wedges
these are small ones, so i cut it in four, if it is bigger cut it in eights
first dip it in buttermilk mix
then coat it in flour
toss around
set it in a wire rack so it dries up
drop it in hot oil
fry on high heat for few mins
then lower the heat and fry till potatoes are done
keep frying
now it is crispy
drain them
Serve
