Egg Salad Sandwich Recipe / Spicy Egg Salad Sandwich Recipe / Egg Salad Recipe

Sandwiches are such a wonderful thing to do when you feel hungry and need something instantly. Just a fried egg placed in between buttered toasted bread, taste phenomenal, plus it makes a great sandwich too. I make quite a lot of sandwiches, hubby loves it so much. So i play around a lot with it.

I always have bread and eggs on hand. because you never know when people in my house get hungry. If they do i can quickly whip up a sandwich at any time of the day. This is one sandwich which i made recently, the filling is based on mayo and eggs. It tasted so amazing, that i have to share it here. 

The cool thing about this sandwich is you can make the egg salad the day before or couple hours before and keep it ready in fridge. So you can make this sandwich in a pro. This makes a great lunch box recipe too. So try this out and let me know how it turned for you.


Preparation Time : 10 mins
Cooking Time : 15 mins
Serves : 2 to 3

Ingredients:
Egg – 3
Bread Slices – 8 Slices (I used white bread)
Oil for toasting bread

For Egg Salad:
Mayonnaise – 1/2 cup
Red Chilli Sauce – 1 tsp
Salt to taste
Sugar – 1/2 tsp
White pepper powder -1  tsp
Onion – 1 small chopped finely
Green Chilli – 1 chopped finely ( I used pickled chilli pepper )
Capsicum – 1 cup chopped finely ( I used green and red )

Method:
Add eggs to water and bring it to a boil. Cook it for 7 to 8 mins. Remove from water and let it cool completely. Now peel them and chop them into small pieces.
Now take mayo in a bowl and add all ingredients except oil and bread. Mix well.
Add in chopped egg pieces and mix well. Now the egg salad is done.
Now take a bread slice, add a scoop of egg salad mix in the bread. Cover it with another slice of bread.
Now heat a tawa or sandwich maker and drizzle some oil in it. Now place the sandwich in the tawa and toast till golden.
Remove and Cut into triangles.
Serve.

Pictorial:
Boil eggs

Once boiled, peel em

Now chop them

I like to do big chunks
Now take your other ingredients

Take some mayo in a bowl

Mix it up

Add some pepper sauce

this is optional, i like my sandwich spicy

Now add in salt, sugar and white pepper powder

mix it up

Now add in some finely chopped onions and
green chilli (i used pickled chillies, recipe soon)

Add in finely chopped capsicum, i used green and red

mix it up

Add in chopped eggs

one mix and salad is done

Take a bread slice

scoop some salad in the center

spread it slightly

cover with another slice

Now heat a grill pan, you can use tawa

drizzle some oil

place the sandwich over this

cover and cook

love the grill marks

remove it to a board

slice and serve

    Looks yummy! if i am to take this for my lunch and i prepare this in the morning wont the grilled bread get rubbery?

    if i make this egg salad sandwich a day before the event. and keep them in fridge. the next day will i have to heat them or just take out of fridge some time before n serve?
