    Finally Yummy Tummy got its own server few days back. Its been a long long day, husband and I have been working constantly past few days to bring this blog live.     Eggless Carrot cake was on my mind for a long time. Finally i made it few days back and was totally in love with it. It tasted so moist and soft and it was delicious.

    About Eggless Carrot Cake Recipe

    Eggless carrot cake is a delightful and flavorful cake that is perfect for those who follow an egg-free diet or have egg allergies. Carrot cake is traditionally made with grated carrots, spices, and nuts, and the absence of eggs can easily be compensated for with alternative ingredients. In this recipe it is a combination of yogurt and baking soda.

    Ingredients for Eggless Carrot Cake Recipe

    • All Purpose Flour
    • Grated Carrots
    • Oil 
    • Powdered Sugar 
    • Yogurt / Curd
    • Baking Powder 
    • Baking Soda 
    • Cinnamon Powder
    • Nuts (Walnuts or Cashews) 
    • Milk
    • Cream Cheese Frosting as needed (Recipe here)

    How to Make Carrot Cake at Home

    Pre-preparation

    Preheat oven to 180 degree C. Line a 20 cm square cake pan with parchment paper and grease it lightly with oil. Set aside.

    Making Carrot Cake Batter

    Now Take oil, yogurt, sugar in a bowl and whisk till creamy. Add in carrots and mix well. Sprinkle in flour, baking powder, baking soda and cinnamon. Fold gently. Add milk as needed and fold gently. Add in nuts and fold gently.

    Baking & Serving Carrot Cake

    Spoon it into the pan and bake for 25 to 35 mins till a toothpick inserted comes out clean. Remove it and cool completely. Spread cream cheese frosting over it and top with nuts and serve.

    • 1 cup All Purpose Flour (120 grams)
    • 1 cup Carrots grated
    • ¼ cup Vegetable Oil (60 ml)
    • ¾ cup Powdered Sugar (150 grams)
    • ¾ cup Plain Yogurt (180 ml)
    • ½ tsp Baking Powder
    • ½ tsp Baking Soda
    • ½ tsp Ground Cinnamon
    • ½ cup Walnuts or Cashews
    • Milk as needed
    • Cream Cheese Frosting
    • Nuts for garnishing optional

    Instructions

    2)Take oil in a bowl

     
    3)Add in powdered sugar
     
     
     
    4)add in yogurt.
     
     
     
    5)Whisk well till creamy
     
     
    6)Add in grated carrots

    8)Add in all purpose flour
     
     
    9)Add in cinnamon, baking powder and baking soda
     
     
    10)mix well
     
     
    11)add in chopped cashews or nuts
     
     
    12)add in little milk
     
     
    13)mix well
     
     
    14)pour it in a parchment lined baking pan
     
     
    15)bake them
     
     
    16)Bake till done

    18)Spoon over the cake
     
     
    19)spread it
     
     
    20)top with nuts , i had some crushed praline
     
     
    21)Slice and serve
