Eggless Carrot Cake Recipe

Finally Yummy Tummy got its own server few days back. Its been a long long day, husband and I have been working constantly past few days to bring this blog live. Finally most of the things are finished and the site looks pretty good. I am totally happy about that. I hope you will enjoy the site even more. Keep on supporting my lovely friends

Eggless Carrot cake was on my mind for a long time. Finally i made it few days back and was totally in love with it. It tasted so moist and soft and it was delicious.

Hope you will give this a try and let me know how it turns out for you..

Preparation Time : 10 mins
Baking Time : 25 to 35 mins
Serves: 9 servings

Ingredients:

All Purpose Flour / Maida – 1 cup
Grated Carrots – 1 cup
Oil – 1/4 cup
Powdered Sugar – 3/4 cup
Yogurt / Curd – 3/4 cup
Baking Powder – 1/2 tsp
Baking Soda – 1/2 tsp
Cinnamon Powder – 1/2 tsp
Nuts (Walnuts or Cashews) – 1/2 cup
Milk as needed
Cream Cheese Frosting as needed (Recipe here)
Nuts for garnishing (optional)

Method:

Preheat oven to 180 degree C. Line a 20 cm square cake pan with parchment paper and grease it lightly with oil. Set aside.

Now Take oil, yogurt, sugar in a bowl and whisk till creamy.

Add in carrots and mix well.

Add in flour, baking powder, baking soda and cinnamon. Fold gently.

Add milk as needed and fold gently.

Add in nuts and fold gently.

Spoon it into the pan and bake for 25 to 35 mins till a toothpick inserted comes out clean.

Remove it and cool completely.

Spread cream cheese frosting over it and top with nuts and serve.

Take oil in a bowl
Add in powdered sugar
add in yogurt
Whisk well till creamy
Add in grated carrots
Mix well
Add in all purpose flour
Add in cinnamon, baking powder and baking soda
mix well
add in chopped cashews or nuts
add in little milk
mix well
pour it in a parchment lined baking pan
bake them
Bake till done

Spoon over the cake
spread it
top with nuts , i had some crushed praline
Slice and serve

      normal cooking oil.

    Can we use whole wheat flour instead of maida?

      Yes u can. But texture may vary a little.
