    Eggless Fruit Cake Cupcakes

    I can never have enough of muffins or cupcakes recipe. Each time I try different recipe and each time I keep on loving this. This is a fluffy and soft cupcake recipe.This fruit cupcake is delicious and so moist. Fragrant and aromatic muffin recipes.

    How to Make Eggless Fruit Cake Cupcakes

    • Preheat oven to 180 degree C. Prepare a muffin pan by lining it with cupcake wrappers and set aside.
    • Take butter, sugar and vanilla in a bowl and cream well.
    • Add in yogurt and orange juice and mix well.
    • Add in soaked dried fruits and mix well.
    • Sprinkle in flour, cinnamon, baking soda and baking powder and fold gently.
    • Use a ice cream scoop to scoop the batter into the moulds.
    • Bake it for 20 to 25 mins. Insert a toothpick to check whether the cake is done or not.
    • Now remove it and cool completely.
    • Serve.

    Ingredients
      

    • Unsalted Butter - ¼ cup 50 grams
    • Brown Sugar - ½ cup 100 grams
    • Vanilla Essence - 1 tsp
    • Orange Juice - 2 tblspn
    • Yogurt / Curd - 2 tblspn
    • All Purpose Flour / Maida - 1 cup 120 grams
    • Baking Soda / Cooking Soda - ½ tsp
    • Baking Powder - ½ tsp
    • Cinnamon Powder - ½ tsp
    • Dried Fruits - ¾ cup soaked

    Instructions

    Start by soaking your dried fruits and nuts couple days before in wine, rum or brandy.

      Hi Aarthi,in this recipe you have mentioned your one cup measures 240 ml but in the recipe you have mentioned for maida -1 cup as 120 ml.Can you please clarify.Thank you.
