Finding a good cake recipes can be really difficult. But if you found one, then the recipe has to be kept under lock and keys. In my case it has to be in this blog. This is one of my no fail, vanilla cake recipe. I add tutti fruity or chocolate chips or even nuts in them and take it one step further. But my basic recipe is this one..
 I already have a vanilla cake recipe and a eggless vanilla cupcake recipe in this blog. This is another addition to my cakes folder. I made a three layered cake for one of my client, so i baked them in three cake tins and frosted. But if you think that you are not going to make frosting for it, then half the recipe or even you can bake it in a large cake tin.I hope you will try this recipe and let me know how it turns out for you..
Preparation Time : 15 mins
Baking Time : 25 to 30 mins
Makes : 9 Inch 3 layered Cake

Ingredients:
All Purpose Flour / Maida – 3 cups / 360 grams
Sugar – 3 cups / 600 grams Powdered (I used granulated sugar)
Eggs – 5
Oil – 1 cup / 240 ml (I used refined oil)
Milk – 1/2 cup / 120 ml
Curd / Yogurt – 1/2 cup / 120 ml
Vanilla Essence – 1 tblspn
Baking Powder – 2 tsp
Salt – 1/2 tsp
Method:
Preheat the oven to 180 Degree C. Grease three 9 inch round cake pans with oil or butter well. Dust it with flour and coat on all sides, now tap off the excess flour and set aside.
Break open 5 eggs in a bowl and set aside. Mix flour, baking powder and salt in another bowl and mix well, set aside. Mix curd and milk in a jug and set aside.
Now take oil, sugar and vanilla in a large mixing bowl, use a electric beater or handheld mixer to beat the mix till it is light and mixed properly.
Now add in 1 egg at a time and beat well.
Now add in half the flour mix and fold gently. Pour half the curd and milk mix and fold gently. Now add the remaining flour and curd milk mixture and fold well.
Now divide the batter between the cake pans and bake for 25 to 30 mins, or untill a skewer inserted comes out clean.
Remove from the oven and let it cool completely. Now invert the cake and frost it as you wish.

Pictorial:
Take all your ingredients

Crack open 5 eggs in a bowl

Take flour in a bowl

Add in salt and baking powder

Mix it well

Now add milk in a jug

add curd to it, mix well and set aside.

Now take oil in a big mixing bowl

Add in sugar

Add good amount of vanilla

Beat it

Once it is properly mixed

Add eggs one at a time

Add eggs one at a time and beat 

Keep beating 

beat till it is frothy 

Now add in half the flour mix

followed by half the milk mix

Now add in the remaining flour mix

And pour the remaining milk mix

Beat well

Now it is combined

Prepare three cake pan, i did a three layered cake,
 you can use one big tray too.

Pour the batter in

Bake it

Done..

    R u using granulated sugar or powdered sugar..u mentioned powdered sugar in ingredients..but n pics it seems like granulated sugar

    @Shweta GuptaYes u can use but it will affect the texture of the cake, you can use half wheat and half maida

    @sabitha gokulUse 21/2 eggs. Use two whole eggs and break one egg, beat it and add half of it. If it is super large eggs add 2

    What type of oven should I use to bake 2 cakes simultaneously. At present I use a convection oven which can fit only 1 cake at a time…

    Hello aarti madam… I am engineer to cooking… Ur site helps me lot.. Pls keep on uploading new items… I have a doubt… I made this cake 2 times… I used butter instead of oil its taste good but in the middle of top of the cake is not cooked… My oven is LG.. I kept 230 temperature and time 30 mins… Its not cooked.. I increased time but its not cooked my became harder… Pls give me solution

    i bakd dis cake exactly and it turned out pretty great in taste but it was not browned at the top.what should i do to get brown crust? i use morphy richards OTG.

    @mahaI am not sure what went wrong. It may be because of the oven. I can give you one tip, if you need the brown crust, just place the cake under the grill for just 45 seconds to 1 min till it browned. Never leave it and go, always stay near it and keep a eye on it. DOnt cook more than a min or it will turn hard

    Hi aarthi, made this cake today. Its tasted good and so soft. Now I can stop using butter anymore. Thanks for the recipe.
    But one thing, I baked in LG convection oven. At 23 min I stopped baking bcz its all cooked. After cooling I cut into pieces and stored in air tight container. After 10min or so I see little sticky texture on top which I don't see when baked. Should I need to bake little more. But inside its soft and not sticky..

    @MadhuIt is because you have stored it in container before it is completely cooled. SO cool it completely before storing

    only upper rods
    only down rods
    both upper and down at the same time.

    Hi Aarathy,

    I tried this cake. Used two third of quantity – used four small eggs and water instead of milk and coconut oil for oil. Made the cake in 9 inch round and 15 inch loft. Came really well and is going to be my regular tea time cake I guess.

    I used the mentioned amount of butter and made this cake,but at the end while unmoulding it broke into pieces 🙁 cake was very soft and tasty though,just the top brown part was a little chewy. Where do you think i went wrong?

    Do we need to bake till we get dark brown color on top. Bcz i am baking till lite golden color and cooled completely. Then placed pieces in a box with lightly covered. After an hour i noticed little sticky texture on top of cake. Is that the reason i did not bake till dark golden. Baked for 23 min in covection oven. Waiting for ue rply.

    I tried this recipe with 1/3 ingredients as the backing tray is small. Backed with both rods on in the last but second position in my oven for 25+10+10 minutes. The center was sunken and was sticky. What could have possibly gone wrong?

    @Sangeethathis has to be baked with both elements on. I think you have use too much baking soda or powder.

    Hi Aarthi, Thanks.cake was so yummy. But when I mix butter,sugar and eggs the batter is good. After adding essence,milk,the batter turned out into a curd like consistency.I mean it looks like when we add lime juice to milk… like that.I didn't add curd. Plz help.

    hi Aarthi..deepti here….I tried a cake in the silicon moulds..but it turned out to be dry and crusty. I used the micro+convection mode to bake the cake. Also it did not get brown at the bottom.
    Can I use the aluminium mould available in market? will it spark inside the oven?

    Hi Aarthi, all my cake remains unbaked in the middle, I was using LG charcoal convection microwave, now I have brought morphhy Richards 52 ltr otg n tried with that the result is same mid part of the cake is unbaked while the side is perfectly baked, I am very much disappointed by this, I am very much interested in baking, not sure how to fix pls help me out.

    Hi aarthi, thanks for the recipe. I made one using your recipe it turned out pretty good. Wondering if i can use desi ghee inplace of oil? Will it bake differently? As can i use home made butter instead? Please suggest. Thanks in advance!

    Hi Aarti,I am your big fan your recipes are too good ,can I use steel tray for baking cake because I am not having aluminium tray…how much time set in my OTG . Tell me answer urgently…. It’s too much important for me…
