    Eggless Chocolate Lava Cake also known as lava cake or molten lava cake is made with plain flour, sugar, butter, chocolate and raising agents. These are indulgent decadent dessert for any gatherings or special occasions. In this post, learn how to make the perfect molten lava cake made eggless with step by step pictures and video.

    Who doesn’t love molten lava cakes. I have shared many versions of molten lava cake in the past like microwave version. On this post i got many queries asking me to share eggless version, so here I am delivering you the eggless version of this cake which has a real molten chocolate in the centre.

    About Eggless Lava Cake

    Chocolate lava cakes or molten lava cake is nothing but under cooked chocolate cake with molten centre. Traditionally you use eggs in the cake and bake it for less time in oven which results in ooey gooey chocolate centre and lava part. But in eggless version you have to put some thoughts in the cake.

    Many recipes on the internet shows to place a piece of chocolate in the center of the batter and bake which results in the lava part. I have tried that so many times with different type of chocolates. I couldn't achieve the lava part, most of the time my chocolate harden, or it gets soft but doesn't gives the lava like texture.

    So I came up with a simple recipe, in which you will be making a thick ganache with chocolate and cream and make it into balls. Stuff this into the cake and bake which gives you the perfect lava texture. Try it to see!

    Eggless Chocolate Lava Cake Ingredients

    Chocolate - Using good chocolate is important, try to invest in the best quality chocolate for this cake. Semi sweet chocolate chips can be used. I used a combination of 40% dark chocolate and 70% chocolate. Never use compound chocolate it doesn't taste good.

    All Purpose Flour - Very little amount of flour is used in this cake which gives the desired texture. Wheat flour can be substituted.

    Butter - Unsalted butter is preferred in this recipe also make sure you melt it before using. You can melt butter in a sauce pan or in microwave. For easy option you can use oil. I have tried this cake with oil and it works great.

    Milk - Use whole full fat milk for the cake which adds the moistness to the cake. Milk can be substituted with almond milk or soy milk.

    How to Make Eggless Chocolate Lava Cake

    Preparing Chocolate Truffles

    Take chocolate and cream in a microwave safe bowl. Melt them in microwave for just 10 to 20 seconds. Remove and stir until chocolate is melted completely. Place this bowl in fridge and let the chocolate harden. Use a 1 tbsp measuring spoon to remove the chocolate and shape it into truffles. Set aside in fridge till need. 

    Pre-preparation

    Preheat oven to 180 degree C.  Grease two 240 ml Ramekins with melted butter or oil. Dust with cocoa powder, coat on all sides and set aside.

    Making Lava Cake Batter

    Take flour, sugar, cocoa powder, baking soda, baking powder and salt in a bowl. Mix really well. Add in oil, milk and vanilla and mix well. 

    Baking

    Pour this batter into two ramekins. Place the chocolate truffle in the centre of the ramekins. Cover with more batter using a spoon . Place this in oven and bake for 18 to 20 mins. Don’t over bake.

    Serving

    Remove the ramekins from oven, let it cool down for 5 to 10 mins. Unmould and dust the top with powdered sugar and serve with ice cream or fruits.

    How to Make Eggless Lava Cake (Stepwise Pictures)

    1)Start by making chocolate truffles. Take chocolate in a bowl.

    2)Add cream to it and melt in microwave or double boiler.

    3)Mix until chocolate is melted.

    4)Place this in fridge until it hardens

    5)Shape it into balls like and place in fridge.

    6)Preheat oven to 180 degree C.  Grease two 240 ml Ramekins with melted butter or oil. Dust with cocoa powder, coat on all sides and set aside.

    7)lets make cake batter. Take flour in a bowl.

    8)Add sugar

    9)Add salt, baking soda and baking powder.

    10)Add cocoa powder

    11)Mix well

    12)Add milk.

    13)Add oil or melted butter.

    14)Mix well.

    15)Spoon into ramekins.

    16)Place truffle inside.

    17)bake

    18)Now it is baked

    19)Unmould.

    19)Serve

    20)These taste amazing warm.

    21)Make sure you enjoy them with a scoop of ice cream.

    Expert Tips

    • Measurement is key. Make sure you measure everything in proper weighing scale to be precise.
    • Using good quality chocolate is important for taste of the lava cake.
    • Instead of making truffles you can place a piece of chocolate inside the cake and bake. But sometimes some chocolate variety doesn’t melt.
    • You can make the truffles a day in advance and make the cake next day.

    • 2 240 ml Ramekins
    • oven
    • Mixing Bowl
    • Microwave (optional)

    Ingredients

    For Chocolate Truffles

    • 100 grams Semi Sweet Chocolate Chips
    • 1 tbsp Cream (or use 2 tsp milk)

    For Cake Batter

    • ¼ cup All Purpose Flour | Maida (30 grams)
    • ¼ cup Sugar (50 grams)
    • 2 tbsp Cocoa powder (15 grams)
    • ⅛ tsp Salt
    • ¼ tsp Baking powder
    • ⅛ tsp Baking Soda
    • 2 tbsp Oil or Melted Butter (30 ml)
    • 100 ml Milk
    • ½ tsp Vanilla Extract

      @himankMade this today and it was the most delicious dessert I made under 5 mins. To those who find their chocolate not melted try using chocolate in room temp and not straight from fridge and you can also chop it into smaller pieces and be generous in the amount of chocolate you put. Also use a good quality cocoa powder I used bensdorp and it was delicious.

      I made this today and it was a disaster.
      Firstly the batter wasnt liquidy so I tryed to add milk to make it into a liquid and secondly after I put it in the microwave for 1 min it was all wierd and liquidy. Please please please can u tell me wht I did wrong 🙁

      @AnonymousU have a normal microwave. This cake cannot be done in that. For baking cakes you need a convection oven. THat doesn't mean you cannot bake in that oven, you can use my microwave baking recipes to bake cake in your oven.

      Hi Arti, please advice me how to cook food in microwave n keep it soft bcoz anything I cook or heat up in the microwave turns hard as soon as it cools down. I tried some of your recipes and it turned out wonderful but got hard n lost its taste as soon as it cooled down.

      You have mentioned in one of ur posts that ur microwave is 800w... my microwave is 1100w and I m not able to adjust the power level exactly to 800w.. so how many minutes shd I hav my cake baked with 1100w power?

      Say for example for the vanilla cake you have baked it for 3 mins and can I do it for (0.45 ×3) 1.35 min in my microwave(1100Watts) ?

      i tried your recipe for choco lava .i just made onw change as the batter was too runny i used only 2 tbsp of milk and it turned out delicious.also one more problem that i faced was the dairymilk silk that i put went down to bottom and didnt melt as i had wished.i used silk at room temp .

      The recipe came out amazing. My 7 years old daughter enjoyed like anything. I had heavy cream in my refrigerator, so I just substitute cream instead of milk With an extra spoon of milk to dilute thin. Thanks for your perfect recipe.

      Bumped into your blog yesterday, and tried your recipe today. I dunno where I went wrong, but my chocolate didn't melt. Tried twice to make sure, but no luck. First I used Dairy milk (not silk), and then Galaxy chocolate. Bot were at room temp. Followed the measurements, but had to cook for more time (I think my oven wattage is less). Still it isn't molten lava.. what could be wrong?

      The whole thing is tasty,but it did not give the molten lava flowing out consistency, I put grated chocolate n it sin work, then put soft chocolate, that too din work.The grated chocolate cake helped a lil as the whole chocolate cupcake was tastybasvhe grated chocolate bsoread all over the cake and not in center.Thatbitbwas yummy,but howbto get the lava flowing effect?

      But unfortunately my cake did not turn out good,dont know where I went wrong 🙁 I never cooked an eggless cake before so I dont know how it will look like, my cake texture was kind of similar to half cooked egg and when I increased the cooking time my chocolate hardened.What to do? 🙁
      My microwave is 1200W. And my chocolate was frozen so I defroze it in microwave before adding to the cake... Am looking forward to your responds.. 🙂

      I am new to microwave baking/ cooking. And the first recipe that I tried was the choco lava cake.

      I increased the quantity of milk to 5 tbsp as the batter was not smooth.

      and cooked it for 1 min only. I did not select microwave method.

      The cake was yummy. My family enjoyed it.

      Hi Aarthi, mixed everything with exact measurements but it didn't get cooked in a min. Even after 3 mins it had the consistency of kali or thick halwa. Wat is the temp r watts that you used? I mixed them in a mixer jar,would that have been the cause?
