    French Almond Cake Recipe

    "French Almond Cake is a fluffy and moist cake made with almond flour, yogurt, oil. The recipe calls for few ingredients which can be made in a jiffy. Almond flour in the cake makes it super moist. The cake has an almond aroma which fills the house when baked."

    Almond Cake has the unique flavour of ground almonds. The almond extract added in the cake will adds so much more aroma to the cake.

    About French Almond Cake

    A financier is a small French almond cake, flavoured with beurre noisette, usually baked in a small mould. Light and moist with a crisp, eggshell-like exterior, the traditional financier also contains egg whites, flour, and powdered sugar. The moulds are usually small rectangular loaves.

    This is an almond cake similar to financier, but it is made in a large cake mould as a whole cake.

    French almond cake is also known as financier in French which is usually made in a tiny mould and flavoured with Brown Butter. The typical financier combines egg whites, flour, and powdered sugar, and is light and moist with a crunchy, eggshell-like exterior.

    A pastry maker named Lasne devised the dessert in the nineteenth century.  Because most of his clients were brokers who didn't want their  fingers stained, he created this moist sponge cake, fashioned it to resemble a brick of gold, and the French almond cake was born.

    HOW TO BAKE CAKE IN A PRESSURE COOKER

    • Preheat a pressure cooker or any pot for 5 mins.
    • Place a little separator at the bottom of the pot.
    • Place the cake pan over it. cover with lid and cook on very low heat until baked.
    • If you are using pressure cooker for baking, don't use whistle and the rubber gasket. Else it may melt.
    • Alternatively you could add some salt or sand in the bottom of the pot or pressure and place the cake pan over it and bake.

    Almond flour

    Almond flour is a nutrient-dense flour derived from almonds that is low-carb, grain-free, and keto-friendly. This flour, like the nut, is abundant in fat, which keeps baked foods moist and soft.

    Almond extract

    Almond extract is a concentrated liquid with a strong almond flavour that is used to simulate the taste of almonds.

    Yogurt

    Although yoghurt contains significantly fewer calories and fat than standard baking ingredients like sour cream, it can produce identical effects without losing flavour.

    How to Make Almond Cake

    1. Ingredients: Gather all your ingredients. Let's make some french almond cake. Make sure all the ingredients are at room temperature.
    2. The Baking Pan: I used a round cake pan for baking the cake. You can use square cake pan or mini muffin pans as well.
    3. Wet Ingredients: mix together yogurt, oil, sugar, extract till combined.
    4. Dry Ingredients: mix together flour, almond flour, salt, baking powder. gently combine these ingredients.
    5. Bake the Cake: sprinkle sliced almonds over the cake and bake till golden and cooked.
    6. Serve: you can serve the cake warm or at room temperature with a dollop of ice cream or whipped cream.

    Ingredients
      

    • ½ cup almond flour
    • ¾ cup all purpose flour | maida
    • ⅓ cup curd | plain unflavoured yogurt
    • ⅓ cup vegetable oil
    • 2 eggs
    • ½ teaspoon almond extract
    • ¾ cup sugar
    • 1½ teaspoon baking powder
    • 1 teaspoon vanilla extract
    • 3 tablespoon sliced almonds

    Instructions
     

    • Preheat oven to 180 degree c / 350 degree F. Line a 8 inch round cake pan with parchment paper and grease the sides with oil and set aside.
    • Take yogurt, oil, eggs, sugar, vanilla and almond extract in a bowl and mix well.
    • Add in baking powder and mix well.
    • Add in almond flour and regular flour and fold gently.
    • Spoon this into the cake pan and gently spread it evenly.
    • Top with sliced almonds and pop it into the oven and bake for 25 to 30 mins till it is golden and completely cooked.
    • Remove it from oven and leave it to cool for 10 mins.
    • Now unmould it gently and serve.

    Notes

    1. If you don't have almond flour on hand. You could take ⅓ cup of whole almonds and powder in a blender till fine and use it.
    2. Never over mix the batter else it may get hard and dense.
    3. Almond extract is optional, you can skip it if you don't have it.
    4. Instead of oil, you can use melted butter.

    BAKE AHEAD, STORAGE & FREEZING

    French Almond Cake can be stored at room temperature for 3 to 4 days. Cakes can be stored in fridge for a week. You can freeze them for upto a month. Thaw the cakes in fridge overnight before serving.

    STORAGE SUGGESTIONS

    You could store the almond cake at room temperature for 2 to 3 days. Store it in a air tight container in fridge for over a week.

    SERVING SUGGESTIONS

    You can serve this cake warm with a dollop of greek yogurt or vanilla ice cream.

      Hi Aarthi,
      Lovely recipe. Could we replace the all purpose flour with millet flour or chickpea flour. my husband is a heart patient and I am trying to replace the all purpose flour with something like Millet or Chickpea or coconut flour.

        It may affect the texture if you use millet flour. But you can use wheat flour.
