    Super Crispy Indian Spiced Fried Chicken Recipe, with the most crunchy irresistible outer coating. Indian Fried Chicken marinated with ginger, garlic, spices, yogurt, lemon. Coated with rice flour and plain flour to create a crunchy texture. This fried chicken is seriously addictive and taste so delicious.

    If I want to have one fried chicken for the rest of my life it would be this Indian fried chicken. Forget all other chicken, you have to try this juicy crispy spiced Indian chicken.

    This is a delicious fried chicken recipe which has an Indian spicy twist which is not only easy to make but taste so good.

    About Indian Fried Chicken Recipe

    Fried chicken also known as chicken fry. Brined and marinated chicken coated with a wet marinate and dredged in a flour coating before frying to create the iconic crispy texture. 

    Each region and every home have their signature fried chicken recipe for sure. This one gets an Indian twist to my basic recipe which takes it up a notch. 

    Fried chicken gets its taste and texture from the outer coating and the spices which we use in marination. I went bold with the spices, I used chilli powder, garam masala powder, turmeric, cumin powder for marination.

    I also used ginger, garlic, lemon juice which added to the flavour. Enjoy it with rice, roti or on its own.

    The Marination makes this chicken super flavourful and juicy. But what makes it crunchy and Indianised is the outer coating. It is made with plain flour, rice flour, crushed coriander leaves, crushed red chillies, crushed fennel seeds, curry leaves which gives the super crunchy coating. 

    I used chicken drumsticks for this recipe which is more flavourful than chicken breast. Use bone-in chicken for juicy chicken. 

    Marinate the chicken for minimum 30 minutes to make it tender. The outer coating has crushed coriander seeds, fennel seeds, curry leaves and red chilli flakes which made it so flavourful. 

    Addition of rice flour makes it so crispy, once fried it gets juicy and crunchy.  And once the chicken is fried, the crushed seeds, curry leaves and chillies on the outside gets crispy and super flavourful. 

    Ingredients

    • Chicken - I used bone-in chicken for this fried chicken which made it super juicy and moist. Make sure to make deep slashes over the chicken so the chicken stays juicy.
    • Ginger & Garlic - freshly crushed ginger and garlic adds aroma and taste.
    • Spice powders - I used a combination of Kashmiri chilli powder, turmeric, cumin, garam masala powder and pepper powder.
    • Lemon - it is important to use some kind of acidic ingredients like vinegar or lemon to hide the raw chicken flavour.
    • Curd - along with lemon juice, yogurt (curd) helps tenderising the chicken. 
    • Egg - egg helps binding the chicken and make the chicken crispy when fried.
    • Flour to use - I used a combination of rice flour and plain flour. You can use cornstarch also.
    • Flavourings for coating - freshly crushed coriander seeds, fennel seeds, dry red chillies, curry leaves is added in the coating makes it super flavourful. 
    • Oil - use neutral oil like sunflower oil, ground nut oil can be used. 

    Step by Step Pictures

    Preparing Chicken 

    1)Take your cleaned chicken drumsticks, make deep slashes on it using a sharp knife. Pat dry with paper towel and set aside.

    Prepare Marination 

    2)Take all ingredients given for marination in a bowl and mix well to combine.

    3)You can taste this marination at this point and adjust salt and lemon accordingly.

    Marinating Chicken 

    4)Add chicken into the marination.

    5)Mix really well and set aside for 15 to 30 minutes.

    Outer Coating

    6)While chicken is marinating. Prepare outer coating. Combine rice flour, plain flour in a bowl.

    7)Add in crushed coriander seeds, fennel seeds, salt, dry red chilies, curry leaves.

    8)Mix well and this is your dry coating.

    Dredging Chicken

    9)Now take the marinated chicken, add a tablespoon of the flour mixture from the outer coating into the chicken to help with binding.

    10)Mix it really well.

    11)Now take this chicken and add it into the flour.

    12)press it gently so the chicken is well coated with the flour. Place this on a wire rack to rest for few minutes.

    Frying Chicken

    13)Meanwhile heat oil for deep frying in a pan on medium high heat. Once the oil is hot enough, add the chicken into the oil and fry for 8 to 10 minutes on medium heat.

    14)I covered the pan loosely with a lid and fried for even frying.

    15)Now flip over the chicken and fry uncovered for another 8 minutes. Now remove the chicken on some paper towel.

    16)Serve hot.


    Expert Tips

    Choosing chicken - Use bone-in chicken for maximum juicy and crispy texture. You can use boneless chicken breast too, but the cooking time may vary. It take less time to cook.

    Brining - for more juicy chicken, brine chicken before and use. Mix 2 tablespoon salt, 2 tablespoon sugar, 1 litre water in a bowl. Add chicken into it and let it brine for 2 hours for juicy chicken.

    Marination - you can marinate the chicken for minimum 30 minutes to maximum 2 hours. Longer you marinate, just the chicken will be.

    Frying - Take care when frying chicken, fry chicken on medium heat till crispy.

    Deep Frying Pot

    Ingredients
      

    • 4 no Chicken Drumsticks
    • Sunflower Oil for Deep Frying

    For Marination

    • 1 tablespoon Kashmiri Red Chilli Powder
    • 1 teaspoon Black Pepper powder
    • 1 teaspoon Cumin Powder
    • 1 teaspoon Turmeric powder
    • 1 teaspoon Garam masala powder
    • 2 tablespoon Ginger Garlic Paste
    • 2 tablespoon Lemon Juice
    • 2 tablespoon Plain Curd (Yogurt)
    • 1 teaspoon Salt to taste
    • 1 large Egg

    For Outer Coating

    • ¼ cup All Purpose Flour
    • ½ cup Rice Flour
    • 1 tablespoon Coriander Seeds crushed roughly
    • 1 tablespoon Fennel Seeds crushed roughly
    • 1 tablespoon Red Chilli Flakes
    • 3 sprig Curry Leaves chopped roughly
    • 1 teaspoon Salt or to taste

    Instructions

    • Outer Coating - While chicken is marinating. Prepare outer coating. Combine rice flour, plain flour, and all the ingredients into the flour and mix well. Set this aside.
    • Dredging Chicken - Now take the marinated chicken, add a tablespoon of the flour mixture from the outer coating into the chicken to help with binding. Mix it really well. Now take this chicken and add it to the flour mixture and press it gently so the chicken is well coated with the flour. Place this on a wire rack to rest for few minutes.
    • Frying Chicken - Meanwhile heat oil for deep frying in a pan on medium high heat. Once the oil is hot enough, add the chicken into the oil and fry for 8 to 10 minutes on medium heat.
