    Instant Corn Idli Recipe with step by step pictures. As this is instant recipe you can make idilis within an hour. It turned into soft, spongy, fluffy and healthy idlis.

    Instant Cornmeal Idli

    I found a packet of broken corn during my last visit to my super market. My first plan is to make idlies, puttu and upma using that.This is a instant kind of idli made with curd. But there is another version which is made with grinding urad dal and adding this to that. Will share that as well soon.

    Ingredients for Instant Cornmeal Idli

    • Broken Yellow Corn - 1.5 cup
    • Thick Unsour Curd / Yogurt - 1 cup
    • Water as needed
    • Salt to taste
    • Oil - 1 tsp + for greasing idli plates
    • Mustard Seeds / Kaduku - 1 tsp
    • Urad Dal / Ulundu Paruppu - 1 tsp
    • Eno Fruit Salt - 1 tsp (Baking soda - ½ tsp)

    How to Make Instant Cornmeal Idli

    1. Take broken corn in a mixer and powder it finely. Add in curd and puree it finely.
    2. Pour it into a bowl, add more water if needed and salt. Let it sit for 30 mins.
    3. Heat oil in a pan, crackle in mustard seeds and urad dal. Pour this into the batter and mix well.
    4. Add in eno salt and mix well.
    5. Grease idli plates with some oil. Fill idli mould ¾th full. Cover and steam it for 15 mins.
    6. Remove it and let it cool a little. Dip spoon in water and remove idlies carefully.
    7. Serve with chutney..

    Ingredients

    • 1.5 cup Broken Yellow Corn

    Instant Corn Idli Recipe Step by Step 

     
    I used this broken corn
    Take broken corn in a blender..It is very coarse,
    so i powdered it lightly
    powder it
    once it is like a fine rava
    add in curd / yogurt
    make it into a fine puree
    pour it into a bowl and let it soak for 30 mins
    now it has thickened a lot
    add in salt
    mix well
    Heat a tsp of oil in a pan
    add in mustard and urad dal
    pour this over the batter
    mix really well
    now open a packet of eno salt
    pour in and mix well
    take your idli plates
    grease it lightly with oil
    spoon it in
    dont fill it too much
    place it in a steamer
    cover and steam
    till it is cooked
    Use a spoon to remove the idlies
    Look how beautiful it looks
    done
    enjoy

      I prepared your mother's appam recipe today. I did exactly the same way but added sugar, salt and cooking soda instantly after grinding. I am worried about cooking soda. I kept the batter outside for fermentation.
      Adding cooking soda earlier is harmful or
      not?

      @Bala JayaseelanYou should not add cooking soda immediately. It should be added at the last minute alone.
