Oven Roasted Whole Chicken Recipe / Grilled Whole Chicken Recipe / How to Roast a Whole Chicken

Roasting a whole chicken is one of my long term mission. I wanted to do it so badly. But something put me back in it. And finally last week i got the courage to roast a whole chicken. I asked hubby to get a chicken with skin on, but sadly my butcher took most of the skin out. Roasting chicken with skins tend to give more juicy chicken. But i was little worried that my chicken had no skin on their breast side, so it will get dried. But to my surprise the chicken turned out so moist and juicy..I love it to the core and everyone at home loved it and the entire chicken got over in 30 mins. I served it with garlic mayo, naan and coleslaw..

Preparation Time : 10 mins
Marinating Time : 30 mins
Cooking Time : 1.5 Hour
Serves : 3 to 4


Ingredients:

Whole Chicken – 1.5 kg
Olive Oil – 1/4 cup
Kashmiri Chilli Powder – 2 tblspn
Black Pepper Powder – 1 tsp
Chilli Flakes – 2 tblspn
Oregano – 1 tblspn
Garlic Powder – 2 tblspn
Onion Powder – 2 tblspn
Salt to taste
Lemon Juice – 4 tblspn

Method:

Take a whole chicken and clean it well. Wipe it with a paper towel to make it completely dry. This will ensure that the marination sticks.

Now take a bowl and add all the ingredients in it. Mix well to form a thick smooth paste.

Now line a baking sheet with foil and brush it with some oil. Place the chicken over it and pour over the marination. 

Massage the chicken well, so the marination sticks all over the chicken. 

Leave it to marinate for 30 mins. 

Preheat the oven to 200 Degree C.

Now place the squeezed lemon half inside the cavity of the chicken. Put the chicken in the preheated oven for 20 mins.

Now after 20 mins, take the chicken out and reduce the oven temp to 160 degree C.

Now baste the chicken with the juices left in the tray. Cover the chicken with foil and bake in the oven for 20 more mins.

Remove the chicken and baste it once more..Cover the chicken with foil and bake in the oven for 20 more mins.

Remove the chicken and baste it once more..Cover the chicken with foil and bake in the oven for 20 more mins. 

Now take the chicken out of the oven, increase the oven temp to 250 Degree C. Baste the chicken one final time. Remove the foil and bake the chicken in the oven for the final 10 mins.

Now take the chicken out of the oven and allow it to rest for 15 mins.

Now use a kitchen scissors or knife and cut into pieces.

Serve withe garlic mayo and naan bread.

Take all your ingredients
You need a cleaned whole chicken

mix it up
drizzle some oil over a baking sheet lined with foil
brush it up
Place the chicken over it
Spoon over the marination
Massage it…Leave it to marinate for 30 mins
Place the lemon wedge inside the cavity
Place it inside the oven for 20 mins
Remove it out
Base with the juices
cover it with a foil
Pop in the oven and bake for 20 more mins
Remove it out
Tilt the pan to get all the juices
Base again
Cover with foil
Pop inside the oven and bake for 20 more mins
Now remove it from oven
Take all the juices again
base it
Cover with foil again

Bake for 20 more mins
Base it once more and bake without a foil..
DONE DONE..
Serve

    The chicken looks amazingly yummy! Just one question. Why did you put the lemon in the chicken's cavity? Does it enhance the flavor?

    @Shahana Shams.I bought it in nuts and spices. You can use fresh ground onion and garlic.

    hi, which mode in my OTG I have to choose? grill or bake? I am a regular follower of your post. I like all your recipes. please mention which mode to choose for all the recipes using otg or oven. it will help for people who have otg or oven. thanks in advance.
