Ok another week of BM has arrived and I am into the theme seven days of rice..Cooking with rice is really easy for me because rice is a staple diet of we southindians…Throughout this week I will show you all kids of quick rice dishes and some special rice recipes too..

Beetroots are such a interesting vegetable to be added in rice, because it gives rice its natural colour so you don’t have to worry about adding any colours to it..When beets are combined with rice, they give a natural sweetness to the rice and that what makes this dish a real hit..This is a very simple pulav that can be made in less than 30 mins..A perfect recipe to put in lunch box..

I hope you like it and let me know what you think..I am sending this recipe to BM Day 1 under the theme Seven Days of Rice…
Ingrediants:
Basmati Rice – 250 gms / ¼ kg
Water – 500 ml
Beetroot – 1 large one grated
Onion – 1 medium size sliced
Cumin Seeds / Jeerakam – 1 tsp
Cinnamon / Pattai – 1 small piece
Cardamom / Yelakai – 4 pods
Chilli Powder – 1 tsp
Coriander Powder / Malli Podi – 1 tblspn
Green Chilli – 1
Salt to taste
Oil- 2 tblspn
Method:
Soak rice for 30 mins. Drain it and set aside.
Heat oil in a pan. Add cinnamon, cardamom, cumin seeds and mix well.
Add onions and sauté for 2 mins. Add salt, chilli powder, coriander powder and mix well.
Add in grated beetroot and mix well. Now add in soaked rice and mix well.
Pour in water and bring it to a boil. Cover and simmer for 15 to 20 mins untill the rice has absorbed all water and cooked.
Turn off the heat and let it rest for 10 mins covered. Open the pan and fluff it with a fork.
Serve with raita.

Rice is a staple in Asian's diet, so the one week of rice recipes is definitely no feat to you ya!:p
I thought the rice looked different, and now I know it's basmati rice. What a great idea to use beetroots to give it that color!:D
