    Squid Fry

    This is my third recipe using squid, they are in season right now. Hubby got a bunch of those few days back and i made this delicious roast. I have asked him to get more, so i can share few more recipes.

    About Squid Fry

    Squid is eaten in many English cuisines, and the culinary term calamari is frequently used for squid dishes. Squid can be prepared and cooked in a variety of ways. Fried squid is a popular dish in the Mediterranean. It is served with tartar sauce in Lebanon and Syria. It is sold in fish and chip shops in New Zealand, Australia, the United States and Canada, and South Africa. In the United Kingdom, it is available in various establishments as Mediterranean calamari or Asian salt and pepper fried squid, and is frequently served as a bar snack, street food, or starter.

    Squid is eaten in coastal areas of India and Sri Lanka, such as Kerala and Tamil Nadu. Squid is deep fried (Koonthal Fry) or roasted (koonthal varattiyathu/Roast). It is known as koonthal, kanava, or kadamba in Kerala and Tamil Nadu.

    Ingredients for Squid Fry

    Baby Squid :
    The meat is firm and white, with a mild, sweet, almost nutty flavour. Small fried squid is frequently firm and chewy, but it should not be rubbery. Soak the squid in lemon or kiwi fruit juice for 30 minutes before cooking to tenderise the meat and remove some of the chewiness.

    Garam Masala Powder :
    Garam masala is a spice blend that is widely used in Indian cuisine, including curries, lentil dishes, and soups. Cinnamon, mace, peppercorns, coriander seeds, cumin seeds, and cardamon pods are toasted in a pan to release their aromatic flavours before being ground to a powder.

    Turmeric Powder :
    The turmeric root is quite bitter, but has an almost citrusy taste, compared to the powder. Turmeric also has something of a sweet taste, and it is quite earthy. When you use the powder, you're unlikely to notice the texture unless you use a substantial amount, but it is somewhat gritty.

    Ingredients

    • Baby Squid - 10 to 12 cut into rings
    • Ginger Garlic Paste - 1 tblspn
    • Chilli Powder - 2 tsp
    • Pepper Powder - 1 tsp
    • Turmeric Powder - 1 tsp
    • Garam Masala Powder - 1 tsp
    • Lemon Juice - 1 tblspn
    • Salt to taste
    • Oil - 3 tblspn
    • Curry leaves a handful

    Instructions

    • Take all the ingredients except oil in a bowl and mix well.
    • Now add it in a pan without any oil and cook them till it is done.
    • Now add in oil and roast them till golden brown.
    • Serve hot.

    Squid Fry with Step by Step

     
    clean and wash squid
    cut it into pieces

     

    add in ginger garlic paste

     

    chilli and turmeric powder

     

    add garam masala powder

     

    add curry leaves

     

    lemon juice

     

    add pepper

     

    add in salt

     

    mix well

     

    now add it in a dry pan

     

    saute them and cook on medium high heat

     

    once they are cooked..it will take around 5 to 6 mins

     

    add in oil

     

    now increase the heat and roast them

     

    roast till it gets golden

     

    now it is done

     

    serve

      The best simple squid recipe.... It tasted yummy, thanks...

      I used coconut oil, so it gave a Kerala touch to it... Yummm

      It is good one except the instructions are not clear or it is confusing. It says :Take all the ingredients except squid in a bowl and mix well. I think it should be Take all the ingredients except OIL in a bowl and mix well.. Nowhere it is shown that curry leaves are needed. There is no instruction about the heat low, medium or high to cook the squid. But suddenly it says now increase the heat and roast them. So quid should be cooked in slow or medium heat before roasting.
