    Swedish Summer Cake

    This is one of nigella lawson's recipe. I came across this recipe when I was going through my favourite cookbook, Nigella Kitchen. I fell in love with it instantly and guess what I was in the kitchen the next minute. Since I had all the ingredients on hand, I was able to make it.

    Ingredients for Swedish Summer Cake

    For Cake:

    • Eggs - 3
    • Sugar - 1 ¼ cup / 250 grams (powdered)
    • All Purpose Flour / Maida - 1 cup / 120 grams
    • Warm Water - ⅓ cup / 80 ml
    • Baking Powder - 1 ½ tsp

    For Custard Filling:

    • Milk - 2 cup
    • Readymade Custard Powder - 3 tblspn
    • Sugar - 4 tblspn

     Strawberry Layer:

    • Strawberries - 2 cup chopped roughly +few more for topping
    • Sugar - 3 tblspn

    For Whipped Topping:

    • Whipping Cream / Fresh Cream - 1 cup
    • Sugar - 1 tblspn (Powdered)

    This cake may look complicated because of the various steps. But it is so easy to put together. I divided the making of the cake in two days. First day, I made the cake and the custard filling. I put the custard filling in fridge and I left the cake at room temp. The next day I whipped up some cream and did the strawberry layer and put together the cake in a matter of minutes. This cake is so tasty you can never resist it.

    The original recipe calls for the homemade custard sauce made with eggs, but I used readymade store bought custard powder to make things less complicated and I don't want to add extra eggs in the custard as well, since the cake has eggs in them.

    The sweet custard and strawberries between layers of sponge cakes taste like heaven. This cake is called swedish summer cake which comes from sweden, they do this on summer with the berries which are available in those season. I used strawberries, you can use raspberry, blackberry or even blueberries if you can get your hands on them..

    How to Make Swedish Summer Cake

    Cake:

    1. Preheat oven to 180 Degree C. Line a 20 cm round cake tin with parchment paper, butter the side and bottom of the tin. Set aside till use.
    2. Sift together flour and baking powder. Set aside. Warm the water in a sauce pan, set aside.
    3. Take eggs, sugar in a big mixing bowl, use a beater to whip this up till it is fluffy and pale in colour.
    4. Slowly add in warm water and use the beater to whip this up.
    5. Add in the sifted flour and fold gently. Once it is combined, pour this into the baking pan and bake this for 25 to 30 mins.
    6. Now remove the cake from oven and let this cool completely.

    For Custard Filling:

    1. Take custard powder, sugar and ½ cup milk in a bowl. Mix well using a whisk.
    2. Take the remaining milk in a sauce pan and bring it to a boil.
    3. Once it boils, add the custard milk mix slowly and keep mixing. It will get thick.
    4. Remove this to a bowl, cover with plastic wrap, make sure the plastic touches the custard filling. Chill this till it is cold.

    For Strawberry Filling:

    1. Take strawberries, sugar in a bowl and mix well. Leave this to sit for 10 mins.
    2. Now the strawberry must have given lots of its juices and become saucy. Set aside.

    Whipped topping:

    1. Take whipping cream, sugar in a bowl. Use a beater to whip this till it is stiff.
    2. Put this in fridge till use.

    For Assembling:

    1. Take the cooled custard filling, add a dollop of whipped cream in this and fold gently. Set aside.
    2. Take the cooled cake, slice it into three equal slices.
    3. Once slice on a plate, spoon some custard filling, spoon some strawberry filling, place another cake and repeat this till third layer.
    4. Now over the third layer, spoon the whipped cream and arrange fresh strawberries on top.
    5. Chill this for a hour before serving.

    Ingredients
      

    • For Cake:

    Line  a round baking pan with parchment paper and
    brush it with oil or butter

    Take flour in a sifter

    add in baking powder

    Sift them and set aside

    Mean while warm some water, the water
    should be only warm, not hot

    Crack open eggs in a large bowl

    add in powdered sugar

    use a electric beater and whip this up

    now it is nice and pale

    now pour in the warm water

    Now add in the flour mix

    pour the entire batter in a round cake pan

    Bake them..Now let this cool down completely

    Lets make the custard sauce

    Take custard powder in a bowl

    pour in some milk

    mix well, so no lumps are formed

    Now take the remaining milk in a sauce pan and
    bring it to a boil

    mix well..keep mixing till it gets thick

    cover with plastic wrap, make sure the plastic touches
    the custard, this way a skin wont form on the top

    chop them roughly and take it in a bowl

    add in sugar

    mix well and set aside for 10 mins

    now take some whipping cream in a bowl and
    1 tblspn of powdered sugar

    now it is thick..set aside

    Now the custard must have cooled, add a dollop of
    cream into the custard and fold gently

    Now invert the cake

    peel off the parchment paper

    Use a knife to slice the cake in three equal parts

      I made this cake for a dinner party and must say it was a huge success. its a yummy recipe and you had explained the stages really properly.       @arun prasaththe recipe is good. the cake will get moist when u pour the strawberries over it and it will be moist since it is covered with fresh cream. You can brush some sugar water over the cake if you want to

      1. Is it ok if I dont use the parchment paper while baking. Or it is necessary?
      2. Can I keep the cake in the fridge after its done, or normal room temperature should be ok?
