Veg Noodles Soup
When you are dieting having lots of soups really helps in boosting the weightloss. This soup has lots of veggies and noodles in them as well, so it makes a complete lunch..
Ingredients for Veg Noodles Soup
- Oil - 1 tsp
- Onions - 1 medium size chopped finely
- Garlic - 4 large cloves chopped finely
- Celery - ½ cup chopped finely
- Carrots - ½ cup chopped finely
- Capsicum / Bell Pepper - ½ cup chopped finely
- Beans - ½ cup chopped finely
- Cabbage - ½ cup chopped finely
- Purple Cabbage - ½ cup chopped finely
- Soba Noodles - 100 grams
- Salt to taste
- Sugar - 1 tsp
- Pepper to taste
- Soya Sauce - 2 tsp or to taste
- Vinegar - 1 tsp or to taste
- Tomato Ketchup - 2 tbsp
- Vegetable Stock or Water - 3 to 4 cups
- Cornflour / Cornstarch - 2 tbsp
- Water - ¼ cup
- Spring onion a handful finely chopped
How to Make Veg Noodles Soup
- Heat oil in a soup pot. Add in garlic and fry for a min.
- Add in onions, capsicum, celery, carrots, beans and saute for 5 mins or so.
- Add in cabbage and saute for 5 to 8 mins. till it shrinks.
- Now add in water or stock and bring it to a boil.
- Add in soba noodles and cook for 5 mins or so..
- Add in soy sauce, ketchup. vinegar, salt, sugar and pepper and mix well.
- Add in cornflour which is mixed with water into this and mix well. Cook till it thickens slightly.
- Finally add lots of chopped spring onion and mix well.
- Serve hot.
