Veg Noodles Soup Recipe – Vegetable Soba Noodles Soup Recipe

When you are dieting having lots of soups really helps in boosting the weightloss.This soup has lots of veggies and noodles in them as well, so it makes a complete lunch..

This soup has lots of veggies in them, and it is packed with lots of fibre which keeps you full for a very long time. So it is good when you are dieting.I made this as a veg version, i have already shared chicken noodles soup..
Hope you will give this a try and let me know how it turns out for you..
Preparation Time : 15 mins
Cooking Time: 45 mins
Serves: 6 to 8

Ingredients:

Oil – 1 tsp
Onions – 1 medium size chopped finely
Garlic – 4 large cloves chopped finely
Celery – 1/2 cup chopped finely
Carrots – 1/2 cup chopped finely
Capsicum / Bell Pepper – 1/2 cup chopped fienly
Beans – 1/2 cup chopped finely
Cabbage – 1/2 cup chopped finely
Purple Cabbage – 1/2 cup chopped finely
Soba Noodles – 100 grams
Salt to taste
Sugar – 1 tsp
Pepper to taste
Soya Sauce – 2 tsp or to tatse
Vinegar – 1 tsp or to taste
Tomato Ketchup – 2 tblspn
Vegetable Stock or Water – 3 to 4 cups
Cornflour / Cornstarch – 2 tblspn
Water – 1/4 cup
Spring onion a handful finely chopped

Method:

Heat oil in a soup pot. Add in garlic and fry for a min.

Add in onions, capsicum, celery, carrots, beans and saute for 5 mins or so.

Add in cabbage and saute for 5 to 8 mins. till it shrinks.

Now add in water or stock and bring it to a boil.

Add in soba noodles and cook for 5 mins or so..

Add in soy sauce, ketchup. vinegar, salt, sugar and pepper and mix well.

Add in cornflour which is mixed with water into this and mix well. Cook till it thickens slightly.

Finally add lots of chopped spring onion and mix well.

Serve hot.

Pictorial:
Take all your veggies
Chop them pretty finely
heat oil in a pot, add in garlic
saute for a couple of mins
add in the veggies
saute till the veggies turn soft
add in cabbage
mix well
now the raw smell leaves away
Add in water or veg stock

bring it to a boil

Now you have to add in noodles..i am using soba noodles

i breaked them in half and added straight into the stock

now let them cook

add in soy sauce

a little tomato ketchup

add a dash of vinegar

add some salt and sugar

mix well..now the noodles is cooked

take cornflour in a bowl

add cold water and mix well

add that into the soup

cook till it thickens up

now add lots of fresh black pepper

add lots of chopped spring onions

mix well

    I m big fan of your cooking and i regularly check ur sites for new recipes.i had trued many of your recipes and toll date all of them came out very well and liked by my family members too.

    HI aarti… Recipe looks v yummy. Can we use normal noodles? I do not know wat is soba noodles
