    Zucchini Fritters Recipe

    Easy and healthy fritters made with zucchini will be your kids new favorite. Enjoy these bite size snack made with zucchini, onions, herbs, wheat flour and cornstarch. Traditionally zucchini fritters is made with eggs, but my version doesn't have eggs added in them and is vegan.

    Zucchini Fritters

    Healthy zucchini fritters which taste so delicious and turns out yummy. This is great to put in your kids lunch box or snacks box. Zucchini is a wonderful veggie to include in your diet. It has tons of nutrients. I have few zucchini baking recipes on my blog like zucchini chocolate bread and this zucchini muffins.

    About Zucchini Fritters

    Zucchini fritters is made with grated zucchini, wheat flour, herbs, onions and cornstarch. A batter is made with zucchini which is pan fried to creates bite size snacks.

    This is a easy way to sneak in vegetable in your diet. If you love sweets, then check this zucchini chocolate bread and this zucchini muffins.

    Ingredients

    Zucchini - use fresh zucchini for this recipe which not only adds taste but the texture is perfect.

    Onions - you can easily use spring onions instead of onions.

    Seasoning - be innovative with the spices used in this.

    Flour - for healthy option, I used wheat flour and cornstarch. You can use plain flour too.

    Step by Step Pictures

    1)Take zucchini

    2)Grate it

    3)Take it in a bowl.

    4)Add in salt and pepper

    5)Add in coriander leaves

    6)Add in onions

    7)Add in garlic

    8)toss well

    9)Add in corn flour

    10)Add in wheat flour

    11)Add in baking powder

    12)Mix well.

    13)Heat oil in a nonstick pan

    14)Spoon fritters in the pan

    15)Flip over and cook.

    16)Flip over and cook till golden

    17)Serve.

    Ingredients
      

    • 1 large Zucchini grated
    • 1 medium Onions peeled & chopped finely
    • 2 no Garlic peeled & chopped finely
    • ¼ cup Coriander Leaves chopped finely
    • 1 teaspoon Salt
    • 1 teaspoon Black Pepper powder
    • 2 tablespoon Cornstarch
    • ¾ cup Wheat Flour
    • ¼ teaspoon Baking Powder
    • 2 tablespoon Oil

    Instructions
     

    • Take all your ingredients and mix well.
    • Heat oil in a pan, Spoon some fritters in and cook till golden on both sides.
    • Serve hot.
