Making Homemade Marshmallows is my dream, but i kind of stayed away from it because i thought it is kind of complicated and it calls for corn syrup and sugar thermometer..But recently i stumbled upon a recipe which catched my eye.Guess what immediately i tried it and it turned out great…

Eventhough i am satisfied with the results, i did few mistakes in making them, I have listed them in my notes section so you can make perfect batch of it..These marshmallows was spongy, fluffy and like a perfect marshmallow..
Cooking Time : 10 to 15 mins
Makes : 20 to 30 cubes

Ingredients:
Gelatin – 2 tblspn
Cold Water – 8 tblspn
Sugar – 2 cups / 400 grams
Cold Water – 1/2 cup / 120 ml
Salt – 1/4 tsp
Vanilla Essence – 2 tsp
Cornflour / Cornstarch – 5 tblspn
Icing Sugar / Confectioners Sugar – 5 tblspn
Method:
Mix cornflour and icing sugar in a bowl and set aside.
Line a 8 inch square pan with plastic wrap, dust cornflour and sugar mix over it. Set aside.
Take gelatin in a bowl, add in 8 tblspn of cold water over it. Let them soak for 10 mins.
Now take sugar, remaining water in a sauce pan. Mix well. Add in gelatin mix and mix well.
Put this on heat and bring it to a good boil.
Now pour this in a bowl and add in salt, vanilla.
Leave this to turn warm.
Use a beater to whip this till it gets light, fluffy and pale. It will take around 15 mins.
Now pour this in the prepared pan and dust with the cornflour sugar mix.
Leave it to set overnight.
Now remove the marshmallow from tray and use a knife to cut this.
Coat each one in cornflour sugar mix and store in air tight container.
Enjoy.
Notes:
1)Line the tray which you are going to set this with plastic wrap and dust them well. So you can remove the set marshmallows easily.
2)Always coat them in a good amount of cornflour and sugar mix well. So they dont stick to each other.
3)Coat the knifes, spatula well with cornflour and sugar mix so nothing sticks.
4)You can store this in air tight container for a week in room temp.

Aarti, thanks for the wonderful recipe. Actually if you line the tray with cling film and extend it to the outside part of the tray, you can easily lift it up and peel off when it is set.
