Baba Ganoush Recipe – Lebanese Roasted Eggplant Dip Recipe with step wise pictures.

Baba Ganoush Recipe. Delicious eggplant dip flavoured with tahini, lemon and garlic which makes a perfect dip for your chips or had with some pita bread.

I wanted to make this for a very long time. Finally i did it few days back and it was delish. Enjoy it with some pita bread or pita chips and you are in heaven. The smoky taste of the eggplant was perfect in this along with the nutty mild flavour of tahini and the zing of little lemon and garlic. Yum.

Ingredients

  • Eggplant - 1 large
  • Tahini - 2 tblsp Recipe here
  • Lemon Juice - 1 to 2 tblsp
  • Garlic - 2 cloves chopped
  • Coriander Leaves - 1/2 cup
  • Olive Oil as needed
  • Salt to taste

Instructions

  • Wash and pat dry eggplant. Roast them on open flame till it is charred. Remove and cool it down. Peel off the skin and cut into small pieces.
  • Now take tahini, lemon juice , salt, garlic and coriander in a blender and whiz till smooth.
  • Add eggplant and pulse once.
  • Remove to a bowl, drizzle with olive oil and serve with pita chips.

Pictorial:

1)Wash a egg plant and pat it dry

2)Poke few holes over it.

Lets roast the eggplant in open flame.

2)Keep rotating and flipping it over till it is roasted completely.

3)Now it is nicely roasted on all sides.

4)Remove it and cool it down. Now peel off the skin.

5)If there is some black chared bits over it, no issues.

6)Chop it roughly

7)Take tahini sauce in a blender. Recipe here

8)Add lemon juice

9)Add coriander leaves

11)Add some salt

12)Add garlic

13)Whiz it up till creamy.

14)Add egg plant

15)Puree roughly

16)Done.

17)Spoon in a bowl, drizzle with some olive oil.
