    Brinjal Roast - Brinjal Fry with Garlic, Cumin & Dry Chillies

    Eggplant With Garlic Recipe

    This has become one of my favorite recipe of all kinds of brinjal recipes in this blog. You know i have quite a few brinjal recipes in this blog and this one has taken its special place. It has a special masala which is added to it which makes it so yummy. This roast pairs beautifully with rice and plain dal. So try it and let me know how it turned out.

    Eggplant (Brinjal) Fry with Garlic Recipe - Steps

    Preparation Time : 10 mins
    Cooking Time : 15 to 20 mins
    Serves : 2 to 3

    Ingredients:

    Brinjal - 3
    Salt to taste
    Turmeric Powder / Manjal podi - ½ tsp


    For Masala:
    Dry Red Chilli - 2
    Garlic - 4 cloves
    Cumin Seeds / Jeerakam - 1 tsp


    For Seasoning:
    Oil - 4 tblspn
    Mustard Seeds / Kaduku - 1 tsp
    Urad dal / Ulundu Paruppu - 1 tsp
    Cumin Seeds / Jeerakam - ½ tsp
    Asafoetida / Hing / Kaya podi - ¼ tsp
    Curry leaves - a sprig

    Method:

    Take brinjal and slice them lengthwise. Grind the ingredients given for masala in a blender and crush them. Set this aside till use.

    Heat oil in a kadai and add in the seasoning ingredients. Let them sizzle for a min.

    Add in the brinjal and toss well in the oil. Season with salt and turmeric powder. Cook it for 5 to 8 mins till it turns light golden.

    Now add in the ground masala and mix well. Cook it on a medium flame for 8 to 10 mins till golden.

    Serve with rice.

      Hi, today being Woman's Day I decided to cook something special for my mom and wife. My mom being a vegetarian I decided to go for Araichu Vitta Sambhar and decided to make this brinjal fry as the side dish. It came out so awesome my wife and son left the non veg i made and were splurging on this brinjal dish.
