Rajasthan Kaddu Ki Subzi / Pumpkin Subzi / Sweet and Sour Pumpkin / Pumpkin Curry – Rajasthani Style

Hai Guys..Hope you had a wonderful time in checking all my previous weeks marathon recipes..I am giving you a consolidated list right now so if you miss anything you can check it now…

Instant Okkarai
Ragda Pattice
Vati Dal Na Bhajiya
Everyday Lentil and Vegetable Curry
Oats Pongal
Channa Masala
Pasi Paruppu Payasam
This week I am upto post rajasthani recipes…I hope you will surely like it..Todays recipe is gonna be a wonderful pumpkin dish..And it has a sweet and sour taste to it..It is so quick to make, it will take around 20 mins to make, that’s it..
This is my DAY 1 recipe for BM which falls in the theme Seven days of Rajasthani Recipes….Hope you like it and let me know what you think..
Ingrediants:
Pumpkin – ½ kg peeled and cubed
Onion-1 chopped
Garlic -3 cloves chopped
Dry Red Chilli – 2
Cumin Seeds / Jeerakam – 1tsp
Fenugreek Seeds / Methi / Vendayam – ½ tsp
Chilli Powder – 1 tsp
Turmeric Powder / Manjal Podi – ½ tsp
Amchoor Powder / Dry Mango Powder – 2 tsp
Sugar – 1 tblspn
Salt to taste
Oil- 1 tblspn
Method:
Heat oil in a kadai. Add cumin and fenugreek seeds in that. Add dry red chilli and mix well.
Add garlic and onions and mix well. Saute for 2 mins. Add turmeric, chilli and amchoor powder and mix well.
Add pumpkin in this and mix well Saute for 2 mins.
Add salt and sugar and mix well. Pour some water and mix well.
Cover and cook for 10- 15 mins or untill the pumpkin is cooked.
Serve hot with roti or rice.
Pictorial:
Take all your ingrediants
Scoop the seeds out of the pumpkin and peel the skins off
cut them into cubes
heat oil
add cumin and fenugreek
add dry red chilli
garlic
and onions
saute for few minutes
add turmeric
chilli
and amchoor powder
saute well
add in pumpkin cubes
and mix well
add salt and sugar
and mix well
add a splash of water
and mix well
cover and simmer
untill the pumpkin is cooked
Serve

    Now that fall is over, pumpkins are very scarce around here. You are lucky that you still have some where you are at. This curry looks delicious and it looks like the start of a wonderful theme-yum!

    the word i'm looking for is "parivu"[in tamil] , to describe your posts..

    the word is loosely related to compassion.. but nothing like saying "parivu".. this one word has escaped from over-usage/corruption..

    That’s the best type of squash: kabocha, because you don’t have to peel it! Great recipe, I’m not familiar with fenugreek or amchur hm. Looks yum 🙂
