    Kaddu ki Sabji (Sabzi) with step by step pictures. Delicious sweet and sour pumpkin recipe from Rajasthan. Popular recipe and very easy to do dish.

     

    Kaddu ki Sabji Recipe (Sabzi)

    This week I am upto post rajasthani recipes. I hope you will surely like it. Todays recipe is gonna be a wonderful pumpkin dish..And it has a sweet and sour taste to it. It is so quick to make, it will take around 20 mins to make, that’s it.

    How to Make Kaddu Ki Sabzi Recipe 

    1. Heat oil in a kadai. Add cumin and fenugreek seeds in that. Add dry red chilli and mix well.
    2. Add garlic and onions and mix well. Saute for 2 mins. Add turmeric, chilli and amchoor powder and mix well.
    3. Add pumpkin in this and mix well Saute for 2 mins.
    4. Add salt and sugar and mix well. Pour some water and mix well.
    5. Cover and cook for 10- 15 mins or until the pumpkin is cooked.
    6. Serve hot with roti or rice.

    Ingredients

    • ½ kg Pumpkin peeled and cubed
    • 1 Onion chopped
    • 3 Garlic chopped
    • 2 Dry Red Chilli
    • 1 tsp Cumin Seeds
    • ½ tsp Fenugreek Seeds
    • 1 tsp Chilli Powder
    • ½ tsp Turmeric Powder
    • 2 tsp Amchoor Powder / Dry Mango Powder
    • 1 tbsp Sugar
    • Salt to taste
    • 1 tbsp Oil

    Instructions

    • Heat oil in a kadai. Add cumin and fenugreek seeds in that. Add dry red chilli and mix well.
    • Add garlic and onions and mix well. Saute for 2 mins. Add turmeric, chilli and amchoor powder and mix well.
    • Add pumpkin in this and mix well Saute for 2 mins.
    • Add salt and sugar and mix well. Pour some water and mix well.
    • Cover and cook for 10- 15 mins or untill the pumpkin is cooked.
    • Serve hot with roti or rice.

    Kaddu ki Sabzi Recipe Step by Step Pictures

     
    Take all your ingredients

     

    Scoop the seeds out of the pumpkin and peel the skins off

     

    cut them into cubes

     

    heat oil

     

    add cumin and fenugreek

     

    add dry red chilli

     

    garlic

     

    and onions

     

    saute for few minutes

     

    add turmeric

     

    chilli

     

    and amchoor powder

     

    saute well

     

    add in pumpkin cubes

     

    and mix well

     

    add salt and sugar

     

    and mix well

     

    add a splash of water

     

    and mix well

     

    cover and simmer

     

    until the pumpkin is cooked

      That’s the best type of squash: kabocha, because you don’t have to peel it! Great recipe, I’m not familiar with fenugreek or amchur hm. Looks yum 🙂
