Healthy and easy beetroot idlies which looks so colourful. This is a great recipe to put in your kids lunch box.
Today's lunch box
--->Beetroot mini idlies aka pink idlies (recipe below)
--->Paneer bites with some ketchup. Recipe which is linked, i used tofu. You can use paneer instead of tofu.
On snacks box
--->Boiled salted sweet corn
I added grated beetroot in idli batter and made mini idlies. I cubed paneer into small bites. Mixed salt, pepper and oregano with some wheat flour and made into a batter. Dipped paneer in this and coated with some breadcrumbs. Fried those till crispy. I add some salt to water and add frozen sweet corn in them and boil for 1 min. Drain. This lunch is packed with carb, Fiber, calcium, fat, vitamins. Beets are excellent source of folic acids, manganese and potassium. Sweet corn is rich in carotenoids.

Beetroot Idli Recipe
Ingredients
- Beetroot - ¼ cup grated packed
- Idli Batter - 1 cup
- Oil for greasing idli plates
Instructions
- Mix batter with beetroots.
- Grease idli plates.
- Spoon batter into moulds, steam for 5 mins.
- Use a spoon to remove the idlies.
- Serve.
Beetroot Idli with Pictures
1)Peel a beetroot
2)Grate it fine
3)Take some idli batter. Recipe here
4)Add grated beets
5)Mix well
6)Grease a idli plate with some oil or ghee
7)Spoon batter into the moulds
8)Place in the steamer
9)Steam for 5 mins
10)Cool them a little, Use a spoon to un mould.
