Broccoli Fried Rice

Broccoli Fried rice
A simple fried rice that uses broccoli in it.This is a perfect lunch box dish..This goes to the event “Healthy Lunchbox Ideas” with the theme “Broccoli..This is originally started by kalyani from what’s cooking…This month the event is hosted by vardhini..Broccoli is colourful vegetable packed full of nutrients..I served this with Thai Sticky Chicken..Hope you all will give this a try and let me know what you think..

Ingrediants:
Basmati rice-1 cup cooked
Broccoli-1 cut into florets
Eggs-2 beaten
Onion-1 chopped finely
Garlic-5 cloves chopped
Ginger-1 inch piece minced
Soya sauce-1 tblspn
Vinegar-1 tblspn
Pepper-1 tsp
Sugar-1 tsp
Salt to taste
Coriander leaves / Spring onion- for garnishing
Method:
In a kadai heat oil and scramble beaten egg till done and remove it and set aside.
Heat oil in a kadai and fry some garlic and ginger.Add in onions and fry for 1min.
Add in salt and sugar..Put in the broccoli florets and mix well.Cook for 5 min.
Add in the cooked basmati rice and mix well.
Throw in the scrambled eggs and mix well.
Add in vinegar and soya sauce and mix well.Throw in pepper and toss well.
Garnish with coriander leaves and mix well…
Serve hot..

    Yes, I've made this before. Just that I had some Broccoli at hand, and added it into my fried rice. This fried rice is indeed nutritious.
