Stir Fry Chicken Rice with Fried Egg

This is one dish which i made few days back and loved it to the core. This is very similar to chicken fried rice, but instead to adding the eggs into the rice, i made it as fried egg and topped the rice. It not only looked pretty but tasted so delicious as well.

If you have some cooked rice in your fridge the fridge then this can be made in a jiffy. if you are vegetarian, you can skip the chicken add add more veggies like cabbage and different peppers, peas and even tofu..

Preparation Time : 10 mins
Cooking Time : 15 mins
Serves: 2


Ingredients:

Cooked Basmati Rice  around 3 cups (Recipe here)
Oil – 2 tblspn
Ginger – 2 tblspn chopped finely
Garlic – 2 tblspn  chopped finely
Green Chillies – 4 chopped finely
Sugar – 1.5 tsp
Salt to taste
Pepper to taste

Soy Sauce – 1.5 tsp

Carrot – 1 large sliced in juliened
Capsicum / Bell Pepper – 1/2 juliened
Egg – 2
Spring Onion a handful chopped finely


For Chicken:
Boneless Chicken – 300 grams chopped finely
Soy Sauce – 1.5 tsp
Salt to taste
Pepper to taste

Method:

Take chicken in a bowl, add in salt, pepper and soy sauce. Mix well and set aside.

Heat oil in a kadai. Add in ginger, garlic and chillies. Saute for a couple of min.

Now add in chicken and toss well. Cook this for 4 to 5 mins.

Now add in carrots and cook this for 3 more mins.

Add in capsicum and cook for 2 mins or so..

Add in salt, pepper and sugar, Add in soy sauce and toss well.

Now add in cooked rice and keep tossing on high heat for 5 mins or so.

Now heat a tawa, drizzle some oil over it, crack open a egg and cook till the egg white is set.

Now scoop the rice onto a plate and top with fried egg.

Garnish with spring onion and serve.

Take all your ingredients
I sliced a chicken breast into small pieces
added some soy sauce
seasoned it with some salt and pepper
mix well and set aside
Heat oil in a kadai
Add in a good amount of chopped ginger, garlic and chillies
saute for couple of mins
Now i added the chicken in
Fry them for few mins
As you can see i just cut the chicken into smaller pieces, because i thought the chicken was little big..
You have to cook this for around 4 to 5 mins
Add in sliced carrots
mix well
cook them for 3 mins or so
add in sliced bell peppers
toss well
cook them till it is done..
now add in some salt, sugar and pepper
add in soy sauce
mix well
Now the mix is done
add in cooked rice
toss well
cook on high heat and keep tossing..Now it is done
Now lets make a fried egg
Crack a egg on a pan and cook till the white is set
Serve the egg over the rice..Enjoy hot..
