Prawn Fried Rice Recipe / Shrimp Fried Rice Recipe

I have quite a few varieties or chicken, fish & mutton recipes. But the one thing which i dont have much collection is prawns. I have been getting quite a few mails from viewers to post more prawn recipes. Couple weeks back when we went shopping we found 1 kg of prawns in a great price, immediately i picked one of that and as soon as i came home. I divided it into 7 portions and freezed separately. I wanted to make a variety of prawn recipes for my blog and for my lovable viewers. So stay tuned Yummy Tummy is going to flow with few superb prawn recipes..

When i was writing down what all prawn recipes i should make, the first thing that came to my mind is fried rice. I am a fan of fried rice and i have quite a few of them in my blog too. Since they are so easy to put together plus they are extremely tasty too..

The key for a perfect fried rice is the rice, you have to cook it till it is aldente or perfectly fluffy. And if you use pervious day cooked rice, then your fried rice will be even better. I started by making a marination for prawns and sauteing them separately then adding that to rice, because i wanted the prawn to have as much flavour as the rice has.
Just as a teaser, i made chilli prawns and grilled prawns too..Yet to make 4 more prawn recipes as well. I hope you will love this and let me know how it turns out for you..
Preparation Time : 10 mins
Cooking Time : 15 mins + 15 mins for cooking rice
Serves : 2

Ingredients:
Basmati Rice – 2 cups cooked one (Refer this post)
Oil – 2 tblspn
Garlic – 5 fat cloves chopped finely
Ginger – 1 tblspn chopped finely
Green Chilli – 1 chopped finely
Onion – 1 medium size chopped finely
Capsicum / Green Bell Pepper – 1/2 chopped finely
Soy Sauce – 1 tsp or to taste
Vinegar or Lemon Juice – 1 tsp or to taste
Salt to taste
Sugar – 1 tsp
Black Pepper Powder – 1 tsp or to taste
Spring Onion – a handful finely chopped

For Marinating Prawns:
Prawns – 12 medium size ones
Salt to taste
Chilli Powder – 1 tsp
Vinegar or Lemon Juice – 1 tsp or to taste
Soy Sauce – 1 tsp or to taste

Method:
Cook Basmati Rice as per this method,, but dont add spices. Set aside. You can even cook the rice the day before and store it in fridge and use the next day for best results.
Take Prawns in a bowl. Add all the ingredients given in the list and mix well. Set aside.
Heat oil in a wok or frying pan. Add in the prawns and cook them for 3 to 4 mins till it is curled and cooked. Remove it and set aside.
In the same pan, add onions, garlic, ginger, green chillies and capsicum. Saute for a min.
Now add in soy sauce, vinegar, salt, sugar and pepper.
Add in the cooked prawns and toss well. 
Add in the rice and fry for 2 mins
Now finish with lots of spring onions. Toss once.
Serve hot.

Notes:

1)Cooking Rice is key for a perfect fried rice. Cook rice till it is fluffy. You can cook rice the day before and make fried rice the next day. It will give you perfect fried rice.
2)Dont over cook the prawns else it will turn rubbery.
3)You can adjust the soy sauce, pepper and vinegar as per your taste.

Take all your ingredients

Cook your rice by this method..I didn’t add the
whole spices though..

Wash and Clean Prawns

I took some in a bowl

Add some soy sauce

now some chilli powder and salt

Add some vinegar..I used some lemon juice

Mix well 

Heat oil in a frying pan or wok

place the prawn in

cook on both sides for 2 to 3 mins

the prawns will curl beautifully

remove it to a bowl

In the same pan, look at the flavours in the pan..

add in ginger, garlic, green chillies, onions and capsicum

saute for a min

add in salt, sugar and pepper powder

and some soy sauce

add some vinegar..in my case, i added some lemon juice

saute well

Add in the prawns

mix well with the veggies

saute this for 30 to 45 sec

now add in cooked rice

mix that well

add in lots of chopped springonions

toss well

Serve hot

enjoy each mouthful..

    1 cup is 200 gm of rice???….I dont want to use soya sauce…just want to knw wil it b tasty without soya sauce….or kindly suggest me any home made sauce…

    I do not usually comment but i was so pleased with the outcome of this dish. I didnt have green chili on hand so used red chili and turned out fine. I also added an egg to mine. Other recipes would leave me unsatisfied with the taste and the amount of sauce. Thank you so much I will never use another fried rice recipe. Thumbs up!!
