Restaurant Style Egg Fried Rice Recipe

Last couple of days was so hard for me, maha has severe fever and is admitted in the hospital. I have been sitting near her and patting her, i have never seen her this sad and tired, i almost died seeing that. She is slowly recovering now, i am happy to see the smiling face again now. Now her fever has reduced a lot and she has started playing a little. Hubby is out of town, he has been to russia and will be back coming saturday. So i am feeling very lonely and taking the so much pain by myself. Now my baby is fast asleep, i just want to take some quite time for myself, there is nothing more peaceful thing for me to do other than blogging..
This fried rice is a instant fix, if you have leftover rice or want to pack a quick lunch for your kids. I have few more version of fried rice, check out here..
Try this out and let me know how it turns out for you..
Preparation Time : 10 mins
Cooking Time : 15 + 15 mins
Serves : 3 


Ingredients:

Oil – 1 tblspn + 1 tblspn
Eggs – 3
Ginger – 1 tblspn minced
Garlic – 1 tblspn minced
Onions – 1 medium size chopped finely
Green Chilli – 4 chopped 
Capsicum / Bell Pepper – 1 chopped finely
Soy Sauce – 2 tblspn or to taste
Vinegar – 1 tblspn or to taste
Pepper Powder – 1 tblspn or to taste
Salt to taste
Sugar – 1 tsp 
Spring Onion a handful finely chopped


For Cooking Rice:
Basmati Rice – 1 cup
Water – 1.5 cup
Salt – 1 tsp


Method:

Start by cooking Rice, Wash rice in lots of water, soak it for 30 mins. Drain it and take it in pressure cooker, cover it with 1.5 cup of water and some salt. Cover and pressure cook for 1 whistle. Turn off the heat and let the steam go all by itself. Now open the cooker and invert the rice to a bowl or plate and fluff it up, let it cool completely.

Now take eggs in a bowl, season with some salt and beat well.

Heat 1 tblspn of oil in a kadai or wok. Pour the egg mix in and scramble it. Once it is scrambled, remove it to a plate.

Now Heat another 1 tblspn of oil in a wok or big kadai. Add in ginger and garlic and saute for a min.

Add in onions, capsicum and green chillies. Saute for couple of mins. Add in salt, sugar and mix well.

Now add in soy sauce, vinegar and pepper powder. Mix well.

Add in cooked rice and toss well. Fry for 5 mins or so. 

Add in cooked eggs and spring onion. Toss once.

Serve hot.

Heat oil in a kadai

pour it in

scramble it slightly

remove it to a plate

Heat some more oil in a kadai

Add in some ginger and garlic

fry them for few mins

Add in onions, capsicum and green chillies

saute for 2 mins

add in some salt and sugar

add in soy sauce 

add in some vinegar

add in pepper

saute well

add in rice

Stir fry for few mins..

add in cooked eggs

add in sprig onion

fry for few mins

serve

    @sindhuSoy sauce has no alternative, but for vinegar you can use lemon juice
