    Egg Fried Rice Recipe, simple rice dish is made with eggs, cooked rice, soy sauce and vinegar. Fried rice is a great quick lunch option which is easy to make and taste so delicious. I have shared authentic restaurant style egg fried rice in this blog post. Learn how to make the best street food style egg fried rice with step by step pictures and video.

    Egg Fried Rice

    This fried rice is an instant fix, if you have leftover rice or want to pack a quick lunch for your kids. I have few more version of fried rice. I have quite a few fried rice recipe in this blog, both veg and non veg. But this is one recipe which i make quite often, it is not traditional fried rice, it is a street food style recipe which i love so much.

    If you have some leftover rice, you can make this the next day and enjoy it, somedays I purposely cook a little more rice to make this. I made this today and enjoyed it with pepper gobi. But you can serve it with variety of side dishes including dragon chicken and chilli chicken.

    About Egg Fried Rice

    Fried rice is one of the easy recipe you can put together with leftover cooked rice. It is also known as egg fried rice or egg rice. It is one of the popular dish which is enjoyed in and around Asia & India. Making a simple egg fried rice requires basic ingredients like leftover cooked rice, eggs, soy sauce, garlic, spring onions.

    Authentic egg fried rice doesn't have complicated ingredients. It is made mainly with cooked rice, eggs, spring onions and seasoning. Sometimes people tend to add soy sauce and msg to replicate restaurant style fried rice.

    In this blog post of fried rice with eggs, I have shared authentic version and restaurant style egg fried rice with vegetables. You can check out both recipe and make whichever you prefer. You can check honey chicken and chilli egg which makes perfect side dish.

    The key point for making perfect fried rice requires cooked rice. Leftover rice or day old cold rice makes the best tasting egg fried rice. Adding MSG which gives restaurant style taste, you can skip it if you want.

    Egg Fried Rice Ingredients

    Rice - You can use cooked basmati rice or jasmine rice. Any Short grain or long grain rice can be used. Only important thing is the rice has to be a day old. Cooked, cooled rice makes the best fried rice.

    Eggs - Add good quality, free range, organic eggs.

    Aromatics - Ginger, Garlic, Green chillies & Onions are the only basic ingredients you need to make a perfect egg fried rice.

    Vegetables - carrots, capsicum and beans can be added.

    Sauces - I add only soy sauce in my egg fried rice. a dash of vinegar or chilli sauce can be added.

    Seasonings - msg is used in restaurant style egg fried which can be replaced with stock powder or a dash of extra soy sauce. 

    Best Rice for Making Egg Fried Rice

    There are many varieties of rice available in the market, it is important to choose the correct rice for making fried rice. Long grain rice is the best choice sine it has less starch content than short grain rice.

    Sticky rice or sushi rice has more starch in them so it cannot be used for making fried rice. In my opinion it is best to use jasmine rice, long grain rice or basmati rice. Jasmine rice has a nice chewy texture to the rice which I really liked in my nasi goreng recipe. But most of the Indo-Chinese restaurants use basmati rice in their fried rice. 

    Cooking the rice a day in advance and storing it in fridge is important for making fluffy fried rice just like take out. Cold rice makes the best fried rice. Every time I want to make fried rice, I like to cook my rice a day in advance and store in fridge. Fresh rice won't work for fried rice since the rice grains may break when stir frying.

    Leftover cooked rice from the previous day can be stored in an air tight container in fridge for upto 3 to 4 days and turned into fried rice whenever you need. In many Asian convenience store, cooked rice is sold in separate containers specially for making fried rice.


    Step by Step Pictures

    How to Cook Rice for Fried Rice

    • 1 cup basmati rice
    • 1.5 cup water
    • 1 teaspoon salt

    Take rice in a bowl and wash it really well with different changes of water. Now take it in a bowl and cover with water. Let it soak for a minimum of 15 mins, you can soak it up to 1 hour max.

    Now strain the rice, take it in a sauce pan. Cover with 1.5 cup of water, add some salt and mix well. Bring this to a boil, cover the pot and simmer to the lowest flame. Cook this for 12 to 15 mins by which time the rice must have absorbed all the water.

    Now turn off the heat, open the lid and fluff it with a fork. Cover the pot again and leave to sit for 15 minute. Use as required.

    Scrambling Eggs

    1)Take all your ingredients. Make sure you get ready with all your ingredients. I chopped some spring onions, green chillies, garlic. Make sure you prepare all these steps before you start cooking.

    Crack open few eggs in a bowl. I like to mix my egg with salt in a bowl before adding it into the wok for even mixing. Season with eggs to your liking. I added some salt alone. You can season eggs with white pepper powder and soy sauce too.

    2)Scramble it well using a fork till egg white and yolk is mixed well and set aside.

    Cooking Scrambled Eggs

    3)Now we are going to make scrambled eggs. Heat oil in a large wok or a kadai. Make sure the heat is on high. We are going to make this fried rice in super high heat. I am using toasted sesame oil for making this fried rice. You can use any oil of your choice.

    4)Add eggs into the oil and mix well. Keep mixing it and keep cooking till the eggs are cooked.

    5)use a spatula or ladle to scramble the eggs in the hot oil. it will cook very quickly. keep mixing till it gets to your liking.

    6)Don't over cook the eggs, because it may get rubbery. So scramble it lightly and remove.

    7)Remove the scrambled eggs to a plate and set aside.

    Stir Frying Aromatics

    8)Heat more sesame oil in the same wok. Let the oil get super hot.

    9)Add in the chopped garlic, chopped white part of 2 spring onions and 1 chopped green chillies.

    Optionally you can use finely chopped onions, capsicum or ginger.

    10)Make sure you chop them finely. Stir fry on high heat for 2 minutes.

    Adding Cooked Rice

    11)Now add in the cooked and cooled rice. You can use any variety of rice as you like. I am using basmati rice.

    12)Now lets season the fried rice. Sprinkle some salt over it.

    13)Add in sugar to taste. Even though sugar is optional, it makes the fried rice taste amazing.

    14)Add in lemon juice or a splash of vinegar. This adds a little tang to the fried rice.

    15)For restaurant taste fried rice, you have to use MSG or ajinomoto. If you don't want to use this, you can skip.

    16)Add in soy sauce. I am using dark soy sauce which adds a depth of flavour and colour.

    17)Add in pepper powder. You can use white pepper powder for a subtle taste or black pepper.

    18)Toss the rice with all the spices and flavourings.

    Adding Eggs

    19)Now finally add in the cooked scrambled eggs and chopped spring onion white part alone.

    20)Stir fry this together for 1 minute. Egg Fried rice is ready to serve.

    21)Enjoy Hot with any side dish of choice.


    Expert Tips

    • Make sure you use day old cooked rice for best texture.
    • Eggs amount can be increased as per your taste.
    • For added taste, egg fried rice can be topped with a fried egg.
    • Chilli oil can be drizzled for added taste.

    Variations

    Simple Egg Fried Rice

    This version of Egg Fried rice is very simple and basic. Stir fry garlic, spring onions, green chillies and eggs. Add in Cooked rice and season with salt, sugar and black pepper powder.Basic egg fried rice, perfect to satisfy hunger.

    Vegetable Egg Fried Rice

    This version is made with lots of vegetables like carrot, beans, capsicum in addition to the original recipe. Cook fried rice with butter instead of oil for added flavour. Great dish to put in kids lunch box.

    Brown Rice Egg Fried Rice

    This version is of egg fried is more wholesome and rich in fibre. I used brown basmati rice instead of regular white rice. The recipe remains the same, uses ginger, garlic, spring onions, eggs, soy sauce, vinegar, salt and black pepper powder.

    Stir Fry Egg Fried Rice

    Addition of frozen green peas which are defrosted adds a pop of colour in this fried rice. Scramble eggs in a kadai and set aside. Then stir fry onions, green peas, soy sauce, salt, pepper and tiny bit of sugar in oil. Add in cooked rice along with the scrambled eggs.

    Ingredients
      

    For Scrambling Egg

    • 1 tablespoon Toasted Sesame Oil
    • 3 no Eggs
    • ¼ teaspoon Salt
    • ¼ teaspoon Black Pepper powder

    For Making Authentic Fried Rice

    • 1 tablespoon Toasted Sesame Oil
    • 2 tablespoon Garlic chopped finely
    • 2 no Spring Onions white part chopped finely
    • 2 no Green Chilli chopped finely
    • 1 teaspoon Soy Sauce
    • 1 teaspoon Vinegar
    • 1 teaspoon Black Pepper Powder
    • Salt to taste
    • ¼ teaspoon MSG optional
    • 1 teaspoon Sugar or to taste
    • 2 no Spring Onion green part finely chopped

    For Cooking Rice

    • ½ cup Basmati Rice
    • ¾ cup Water

    Instructions
     

    • Start by cooking Rice, Wash rice in lots of water, soak it for 30 mins. Drain it and take it in a sauce pan. cover with water. Bring it to a full boil, reduce the fglame to the lowest possible. Cook for 8 minutes on low. Once it is cooked, fluff up the rice and set aside covered for 5 minutes. Now open the pot and invert the rice to a bowl or plate and fluff it up, let it cool completely.
    • Now take eggs in a bowl, season with some salt and pepper powder and beat well. Heat 1 tblspn of oil in a kadai or wok. Pour the egg mix in and scramble it. Once it is scrambled, remove it to a plate.
    • Now Heat another 1 tblspn of oil in a wok or big kadai. Add garlic, spring onion white, green chillies and mix for a minute. Add in cooked rice, season with salt, sugar, soy sauce, vinegar, msg and toss well.
    • Add in cooked eggs, spring onion white and black pepper powder. Toss well and serve hot.
    • If using vegetables, add it after sauteing garlic and spring onion white. Cook for 3 minutes till veggies is tender and proceed with the same recipe.
