    Capsicum Fried Rice / Stir Fry Bell Pepper Rice with Peas – Lunch Box Ideas / Leftover Rice Recipes / Rice in less than 15 mins

    Fried Rice is my absolute favorite one..I make it often in my house, but use a whole lot of different vegetables in it..You can see quite a few fried rice recipe in my blog..I made this version for last Sunday lunch and I simply loved it a lot..My sister loved it too, and both of them enjoyed the meal a lot..This is a great recipe to put in lunch box or use up leftover rice.

    I hope you like it and let me know what you think.. I am sending this recipe to BM Day 5 under the theme Seven Days of Rice…
    Ingrediants:
    Rice – 3 cups cooked (any rice , I used basmati)
    Capsicum- 1 large sliced
    Peas – 1 cup ( I used frozen)
    Onion- 1 large sliced
    Green Chilli – 2 sliced in diagnols
    Ginger – 1 tblspn minced
    Soy Sauce – 1 tblspn or to taste
    Spring Onion ( White and Green Part Separated)
    Oil- 1 tblspn
    Salt to taste
    Sugar – 1 tsp
    Ajinomoto – 1 tsp (optional)
    Method:
    Heat oil in a kadai. Add ginger and sauté for 30 seconds.
    Add onions, spring onion white part and green c hilli. Sauté on high heat for a  min.
    Add in capsicum and peas and mix well. Saute on high heat for 3 mins.
    Add in salt, sugar and ajinomoto and mix well.
    Add in rice and toss well. Add soya sauce and pepper to taste and mix well.
    Garnish with spring onion green part and serve.

      I love fried rice! It's my comfort food and the more veggies it has, the better. This one was pretty good - I topped with handfuls of fresh greens, like rocket and watercress. We're having the leftovers tomorrow as a sidedish with sesame fried chicken.
