    Chicken Masala Recipe with Step by Step pictures. Spicy and flavourful chicken masala with fresh spices, onion and tomato masala. This chicken masala has a thin layer of oil floating on top and goes well with rice or roti.

     

    Chicken Masala Recipe

    We buy chicken at least once or twice in a week. Each time i make it different ways. Most of the time it will be a curry, a roast kind of dish and a fried chicken dish..Sometimes i make it thick and masala like, so it goes well with chapati or paratha. 

    I make masala chicken dish two ways one with coconut and other without coconut. This recipe is using coconut and i will share the other version soon.

    Ingredients for Chicken Masala

    • Chicken - 500 grams
    • Onion - 2 large sliced thinly
    • Tomatoes - 2 large sliced thinly
    • Green Chillies - 2 slit
    • Curry leaves a handful
    • Ginger Garlic Paste - 2 tblspn
    • Chilli Powder - 1 tblspn
    • Coriander powder - 2 tblspn
    • Turmeric Powder / Manjal Podi - 1 tsp
    • Garam Masala Powder - 2 tsp
    • Cumin Powder / Jeera Podi - 1 tsp
    • Salt to taste
    • Oil - 2 tblspn
    • Coriander leaves - 3 tblspn finely chopped
    • For Grinding:
    • Fresh Coconut - ½ cup grated
    • Poppy Seeds / Khus Khus / Kasa Kasa - 2 tblspn
    • Cinnamon Stick / Pattai - 4 cm piece
    • Fennel Seeds / Saunf / Sombu - 1 tblspn

    How to Make Chicken Masala

    1. Take the grinding ingredients in a blender and make it into a smooth puree. Set aside till use.
    2. Heat oil in a pressure cooker. Add in onions, chillies and curry leaves. Saute till the onions turn golden.
    3. Add in ginger garlic paste and saute for a min.
    4. In goes salt and all the spice powders. Mix well for 30 sec.
    5. Add in finely chopped tomatoes and saute for 5 to 7 mins till the tomatoes turn mushy.
    6. Add in the chicken pieces and toss well with the masala.
    7. Now cover the pressure cooker, cook for 3 whistle. Simmer the pan for 5 mins. Turn off the heat and let them steam go all by itself.
    8. Open the cooker and transfer this curry to a pot.
    9. Add in coconut masala and mix well. Cover this and Boil this for 10 mins or so till the curry thickens like a masala.
    10. Add in coriander leaves and mix well.
    11. Serve over rice.

    Ingredients

    • Chicken - 500 grams

    Chicken Masala Step by Step

     
    Take all your ingredients

     

    Ingredients for grinding

     

    Take them in a blender

     

    Make it into a smooth puree

     

    Heat oil in a pressure cooker

     

    Add in onions, curry leaves and green chillies

     

    Saute till it gets golden

     

    Add in ginger garlic paste

     

    Spice powders

     

    Mix well

     

    Add in chopped tomatoes

     

    saute well

     

    Cook till the tomatoes turn mushy

     

    Add in chicken 

     

    Mix well with the masala

     

    Cover and pressure cook

     

    Chicken is done

     

    Now transfer this to a kadai.

     

     
    Add in the ground coconut masala

    Mix well 

     

    Bring this to a boil

     

    cover and simmer

     

    Now the masala is thick

     

    add coriander leaves

     

    mix well

     

    serve

Can you plz tell me what capacity pressure cooker do you use generally in these recipes as well as the baby food ones .. 3l or more? The one shown in the above recipe looks nice and handy.

      I have noticed that the oil content in all your recipes are quite high. Are you not concerned with the ill effects of using too much oil in cooking? Could you please post healthy recipies with low fat content?

      @Shilpa, regarding the oil, this recipe calls for 2 tbsps. Not a lot for traditional Indian food! Plus you can always adjust to your liking. You sound like you are admonishing Aarthi! This is her blog Shilpa. Be nice! @ Aarthi, thank you for this awesome recipe. Have a question. Is there a specific need to transfer from the cooker to a pot to put the coconut masala? Can you just continue in the cooker? Thank you so much.

      Giving a whistle to the chicken in pressure cooker boils the chicken and makes it fluffy. Try instead to just cover it and cook, the chicken will be more tasty!
